PALEO GRANOLA BARS Makes at least 12 bars 3/4 C pecan halves 3/4 C raw cashews 1/2 C raw almonds 5 large pitted dates, pre-soaked if needed 1/4 C shredded coconut 1/2 C raw honey (or 5 T honey & 3 T maple syrup) 1/2 C almond butter (or 1/4 C almond butter & 1/4 C sunflower seed butter) 2 T coconut oil 1 tsp vanilla extract 1/4 tsp almond extract 1/4 C dried cranberries 1/4 C raisins 1/4 C chopped apricots, opt. 1/2 C chocolate chips or chunks, opt. Coarse sea salt Line 9x13 baking pan with parchment paper. Mix nuts and dates in food processor until consistency of coarse sand. Add coconut and briefly pulse to incorporate. Transfer to a large bowl. Add honey, syrup, butters, coconut oil and extracts in a saucepan over medium heat. Bring to a boil and simmer for up to 5 minutes until gooey. Stir constantly; it burns easily. Stir honey mixture into nuts and blend well. Add dried fruits and mix. Add chocolate. Stir quickly. Pour mixture onto baking pan. Layer a sheet of parchment paper on top and firmly press granola mix evenly with hands until well packed. Remove top paper. Sprinkle with salt to taste. Place pan in freezer for 2 hours. Remove and cut into bars of desired size. Store in freezer or fridge. Tip: Either wrap parchment around each bar, or layer parchment between bars in a container so they don’t stick.
