Despite their name and charred appearance, burnt ends don't taste burnt.
The spices on the pork harden when smoked, creating a flavorsome layer of barbeque bark that has a similar consistency to tender jerky.
Burnt ends taste like rich, smoked pork caramelized in the sweet molasses beauty of barbecue sauce. If you are looking for an appetizer to "WOW" friends and family, you have to give this a try!
Directions:
Cube up pork belly into 1" - 1.5" cubes
Season the pork, I used Suclebusters SPG and Hog Waller.
For wood I used 1/2 cherry and 1/2 apple.
Smoke on racks at 225 for 3 hours
Put them in a pan and coat them in butter, brown sugar, honey and bbq sauce. Mix contents well.
Cover and place back on the smoker for 1.5 hours.
Uncover and add more honey.
Smoke for another hour.
Pull them and let them cool down.
Server and Enjoy!
