pear and almond tart, frangipane and seasonal spiced pears baked in a crumbly short pastry case. Pear and almond tart and me go way back, I first made this in a really posh French restaurant in Bath Somerset. But this is more of a bistro dessert in my opinion as it is super simple and rustic. Also if you are on a gluten free diet just omit the pastry or make a gluten free pastry as the almond sponge is just amazing and you will not feel like your getting a substitute pudding. Serve pear and almond tart cold warm or hot, with cream ice cream or custard doesn't matter because pear and almond tart is amazing!

Fisherman's pie / Fish Pie, /classic British dish. The fisherman comes home and gives his loving wife some leftover fish that he couldn't sell, every country has a dish like this, and this one is ours British cooking at its best. Classic fisherman's pie should have a white bechamel sauce, some vegetables, a selection of fish and topped with creamy mashed potatoes.
Top it with cheese and bake until golden and you have the best fisherman's pie, enjoy

My last short video was some seriously sinful buttery mashed potatoes and well the jury is in and sausages with onion gravy is the best friend of mash.
In the UK 'bangers and mash' is one of our most loved dishes.
The term 'bangers' dates back to WW2 where rationing of meat meant that the humble sausage was very popular as the meat content could be altered with all sorts of other stuff added. The result was that the wartime sausage had a tendency to explode while cooking.
I like to braise my bangers with the caramelised onions with cider or beer and chicken stock, this way the sausages absorb the onion flavour and visa versa with the onion gravy getting all sausagey.

Lancashire hotpot
Lamb shoulder 1/2
Medium white onions 3
Large carrots 2
Celery 2 sticks
Chicken or lamb stock 1 pint
Celeriac 1
Or a couple of floury potatoes
Herbs: bay, rosemary and thyme
Salt and pepper to taste
A little oil for frying

Lancashire hotpot is a real British classic comfort food recipe, as with these types of dishes every Lancashire kid will love his Mum's recipe the best, classically the ingredients are limited to stewing lamb of some sort, onions and stock. This stew is then topped with sliced potato and baked until perfect.
I've added some carrot and celery plus some herbs. As I'm avoiding carbs still I've opted for a celeriac to replace potatoes and I didn't thicken the gravy with flour, other than that I should not have offended to many Lancastrians?

Puff pastry / parmesan / cheddar cheese straws. Cheese straws are so simple to make but give maximum satisfaction, flakey pastry combined with super umami parmesan cheese will wow your friends when you serve some chilled beer or wine. Cheese straws make the perfect canape or nibble they look incredible, these cheese straws seem professional but I promise you it's so difficult for them not to look impressive.
