小贴士：
1、冬季和面用温水，少量多次的加入，揉匀后，密封发酵。
2、嫩豆腐切好直接使用，老豆腐切丁后放入热盐水中浸泡5分钟左右，控干水份再使用。
3、醒发好的面团，要揉至光滑而均匀的状态。
4、二次醒发至1.5倍大，手提起有轻飘飘的感觉，再蒸。
