This is my favourite curry recipe, I have included both the dairy and the dairy free recipe below - we usually make it dairy free, but I also love the one with dairy if hubby isn't around! In a slow cooker or crock pot (or sometimes I do it in the wood stove in a cast iron dish for 2-3 hours) add the following
1 finely chopped onion
1 T crushed garlic
1T ginger
1kg or 2 lb of chicken thigh fillets (or you can use chicken with bones in if you like)
1 cinnamon stick or 1/4 t ground cinnamon
1 T of cumin, garum masala, coriander, and sweet paprika
5-6 cardamom pods, crushed
3 T tomato paste
1/4-1 t chili powder
either [ 1 cup of plain yogurt and 1/4 c cream and 1T lemon juice]
or [1 cup coconut cream and juice and rind of 1 lemon]
optional 1t salt
optional 1t sugar
Mix together and cook on high for 6 hours. Serve with steamed rice and naan or roti bread.
