In The Kitchen | Pressure Canning Split Pea Soup
Today on our Canadian Homestead, we are makign Split Pea soup. This Pressure Canning Recipe is from one of my favorite cookbooks the Ball Blue Book - Guide to Preserving. In the video, I made 4 times the recipe in order to have 7 Quart Jars for the canner and leftovers for supper. Here is the Recipe
Split Pea Soup
Yields 5 Pints or 2 Quarts
1 (16 oz) package of dried split peas
2 Quarts water
1 1/2 cups sliced carrots
1 cup chopped onions
1 cup diced cooked ham
1/4 tsp allspice
salt and pepper to taste
Combine dried peas and water (or broth as I used in the video), bring to a boil. Reduce heat and simmer covered for 1 hour or until peas soften (i usually only do 30 - 40 minutes) then add remaining ingredients and simmer for another 30 minutes.
Ladel hot soup into hot, sterilized jars leaving 1 inch headspace. Remove air bubbles, clean jar and then finger tighten the lid. Place in warm pressure canner and process at 10 lbs pressure for 1 hour and 15 minutes for pints and 1 hour 30 minutes for quarts. Be sure to follow your pressure canner's instructions.
