印象中夜市裡的棺材板攤位總是高朋滿座,乾脆自己做!在美國比較難買到厚片吐司,我特別想了一個方法把薄片吐司變成厚片,作法非常簡單。搭配自製的白醬內餡,濃郁不膩口,每一口都能吃到蝦,完全是自己做才能享有的奢侈密度,吃完超滿足!

薄片吐司 4 片 或 厚片吐司 2 片
雞蛋 2 顆
○內餡
蝦仁 150 g
菠菜 100 g
牛奶 300 g
無鹽奶油 20 g
麵粉 30 g
起司絲 30 g

Coffin Bread is a popular street food in Taiwan’s night market. It’s a little like a variation of bread bowl, but in a more indulgent style. I used air fryer to make the golden coffin bread and added tasty filling inside the bread. Also, I put some cheese on the top and air-fried it again to create the most beautiful look of a coffin bread! You can add any protein and veggies you like to the filling.

Ingredients▼
○Bread
thinly sliced toast, 4 slices or thickly sliced toast, 2 slices
egg, 2 ct
○Filling
peeled shrimp, 150 g
baby spinach, 100 g
milk, 300 g
unsalted butter, 20 g
flour, 30 g
shredded cheese, 30 g
:Instruction:
●Making the Filling
1. In a saucepan, add unsalted butter.
2. Melt the butter over a low heat.
3. Add flour. Sauté the flour well.
4. Gradually add 1/3 milk.
5. Stir until milk is absorbed completely.
6. Add spinach.
7. Press down the spinach from side.
8. Flip and stir the spinach from the bottom.
9. Move the spinach to the side.
10. Add shrimp to the center of the pot.
11. Cook and stir the shrimp for a while.
12. Gradually add the remaining milk.
13. Stir the mixture well.
14. Add more milk to adjust the thickness. Stir the mixture well.
15. Cook until became your favorite thickness.
16. Taste and season with salt and pepper.
●Making the Coffin Bread
17. Prepare a container a little bigger than the bread slice.
18. Crack and beat 2 eggs in the container.
19. Place the first bread and slightly press it evenly.
20. Place it into the baking basket egg-coated side up.
21. Coat the second bread with the egg.
22. Flip it over and coat both sides with the egg completely.
23. Stack onto the first bread.
24. Place into the air fryer.
25. Air fry at 350℉/ 180℃ for 10 min.
◆ 10 min. later ◆
26. Cut three sides of the bread only half way deep.
27. Thinly slice a lid up.
●Assembling
28. Spoon the shrimp spinach filling into the coffin bread.
29. Cover the top with shredded cheese.
30. Place into the air fryer again.
31. Air fry at 400℉/ 200℃ for 3 min.

自己包的湯圓總是特別大顆,吃起來好過癮!自製湯圓外皮超軟Q的,吃起來有溫度、有手感,有點難形容,但就是比較家常的感覺啦!我喜歡用大大的湯匙裝著湯圓,再前端輕輕咬一小口,然後看內餡緩緩流出,等流到湯圓皮都泡在裡面了就可以拿起來一口吃掉!

○糯米團
糯米粉 100 g
水 75 g
○內餡

Black sesame sweet rice ball is my first choice in winter solstice! This year, I made them by myself! It’s not hard to make tang yuan at home, but if you want to have lava filling, there’s some tricks.

Ingredients▼
○Dough
sweet rice flour, 100 g
water, 75 g
○Filling
black sesame paste, 50 g
salted butter, 45 g
powdered sugar, 30 g
:Instruction:
●Making the Filling
1. In a mixing bowl, add sesame paste and softened butter.
2. Cut the butter into smaller pieces while stir and mix.
3. If it's hard to mix, put a pot of hot water below the bowl.
4. Stir and mix until fully combined.
5. Remove the hot water.
6. Add powdered sugar.
7. Mix them well until fully combine.
8. Cover it and freeze for 30 min.
◆ 30 min. later ◆
9. My filling is too soft, it's better to be solider.
10. Spoon and shape into small filling balls.
11. Divide to total 12 filling balls.
12. Freeze the filling balls for 1 hour.
●Making the Dough
13. Boil a small pot of water.
14. Place sweet rice flour in a mixing bowl and stir in water.
15. Stir until the mixture becomes lumpy.
16. Take a small piece of rice dough.
17. Slightly pinch and flatten the small dough.
18. Place the small dough into the boiling water.
19. Cook until floating to the top.
20. Place the cooked dough back to the mixing bowl.
21. Slightly mix the cooked dough and other dough firstly.
22. Transfer to a bigger mixing bowl.
23. Knead the dough until incorporated.
24. If the dough is too sticky, add some sweet rice flour.
25. Knead the dough until the surface soft and not sticky.
26. Place the dough on a baking mat.
27. Roll the dough into a log shape.
28. Cut and divide to 12 pieces and shape into small balls.
29. Cover with a wet cloth.
30. The frozen filling should be very solid.
●Making the Sweet Rice Ball
31. Take a dough and shape it into a bowl with thick bottom and thin edge.
32. Place a filling ball in the center.
33. Rotate and gather the sides of the dough to close the filling.
34. Pinch the seams shut and gently roll into a smooth ball.
●Cooking the Sweet Rice Ball
35. When the water boiling, add sweet rice balls.
36. Slightly stir the sweet rice balls to avoid them stick on the bottom.
37. Cook until they floating to the top.
38. Turn to a low heat and cook 5 more min.
39. Enjoy!

●Making the Preparation
1. In a small bowl, beat an egg and set aside.

●Making the Dough
2. Sieve flour and cacao powder into a mixing bowl.
3. Sieve powdered sugar.
4. Add salt.
5. Whisk all dry ingredients well.
6. Add the cold cubed butter.
7. Combine the mixture with a pastry cutter or fingers until it becomes crumbly.
8. Dig a well in the middle of the mixture.
9. Gently combine dry and wet ingredients with a fork. Stir until just combined.
10. Separate the dough into halves. It is about 288 g each dough.
11. Place the dough on baking paper, shape it into a thick patty, and wrap it tightly.
12. Put the tart dough into a resealable plastic bag.

◆The Next Day◆
●Making the Crust
13. Generously flour the surface of the baking mat.
14. Place chilled crust dough on the baking mat.
15. Press the dough with a roller from several directions.
16. Roll out the dough.
17. Add flour if needed.
18. Roll out the dough to 3 to 4 mm thick.
19. Dust the surface of the dough.
20. Roll up the dough with a roller.
21. Place the dough on the baking pan.
22. Shape the crust dough to fit the baking pan.
23. Trim the wall of the crust dough.
24. Cover the crust dough and transfer to the fridge for 30 min.

●Preheating the Oven at 350℉/ 180℃
25. Pierce the bottom of the crust with a fork.
26. Cling baking paper on the crust.
27. Transfer to the preheated oven.
28. Bake at 350℉/ 180℃ for 20 min.

29. Remove the dried rice, dried beans, or pie weights.
30. Transfer to the oven again and bake for an additional 5 min.
31. Cover with a board and flip to remove from the baking pan.
32. Cover with a plate and flip over again.
33. You have a chocolate crust waiting for its filling.

其實這種鬆餅因為用酵母發酵,本身麵團的風味已經很濃郁了,所以單吃完全沒問題。想讓味道更豐富的話,可以簡單灑上糖粉做裝飾,我喜歡另外淋上楓糖漿,搭配草莓或其他莓果也很棒!我的鬆餅放涼之後接連斷裂,後來我覺得這個大小滿可愛的,乾脆把全部都可以拆成四顆小三角形,剛好是一口鬆餅!此配方參考自吳克己老師的列日鬆餅

unsalted butter, 120 g

蜂蜜 20 g
Honey, 20 g
酵母 2.5 g
instant yeast, 2.5 g
珍珠糖 40 g
pearl sugar, 40 g
鹽 2 g
salt, 2 g

●Making the Dough
1. In order, add two eggs, sugar, honey, and yeast in a mixing bowl. Then, add flour and salt.
2. Mix all ingredients on low for about 3 min first.
3. Continue to knead on medium for about 4 min.
4. Add 1/3 softened butter at a time.
5. Mix until well combined.
6. Scrape down the side.
7. Continue to knead on medium until well combined.
8. Add 1/3 softened butter again.
9. Mix until well combined.
10. Add all the butter. Mix until well combined.
11. Flip and stir the dough.
12. Continue to knead on medium for 8 min.
13. Add pearl sugar. Mix it well.
14. Cover with a wet cloth and refrigerate for 40 min.

15. Remove the waffle dough from the fridge.

●Making the Waffle
16. Preheat the waffle iron and brush some butter.
17. Place the waffle dough in the middle of the waffle iron.
18. Cover the lid and flip over.
19. It’s done when the light is off and on again.
20. Place the cooked waffle on a cooling rack.
21. Continue to place the waffle dough in the middle of the waffle iron.
22. Cover the lid and flip over.
23. It’s done when the light is off and on again.
24. Place the cooked waffle on a cooling rack.
25. Finish all waffles in the same steps.
26. Enjoy!
