Vegan, No knead, but healthy & moist ~100 % Whole Wheat Pumpkin Loaf Recipe[Gourmet Apron 416]
===== Ingredients =====
-For dough
Whole wheat flour 400 g
Pumpkin puree(Homemade) 150 g
Active dry yeast 1/4 Tsp
Salt 1/4 Tsp
Warm water 100 ml
Coconuts milk 150 ml
Sugar(any sweetener) 2 Tbsp
Oil(Olive oil) 2-3 Tbsp
-Fillings
Raisins, walnuts 40-50 g each
-Topping
Pumpkin seeds
===== Recipe =====
Warm water, yeast into bowl & mix well.
Add pumpkin puree, milk, oil, flour salt into the bowl.
Mix until all dough come together. Add filling & fold together until corporate well.
Cover dough and keep to warm place(I keep inside of oven. just turn on the light)
Let the dough rise until double in size.
Using spatula, try to release some air out from the dough.
Transfer to baking pan
Let it rise until double in size.
Preheat oven for 190°C or 375°F.
Bake for 25-30 minutes.
