We are back on the quest for regular videos. Here we start our cooking in a van series. We don't have an oven and have 2x LPG burners and wanted to show how well we eat, despite what may appear as a limitation without an oven, how versatile and easy vanlife cooking can be. I tend to make things up as I cook, so wanted to share some of my recipes and van cooking 'secrets' with you. The secret is in fact it's easy! This isn't a recipe as such as many of the ingredients can be swapped out according to what you have available, so here we used black beans as we didn't have any kidney beans, but any beans will do. Hello! In today's episode (Ep10) we start clearing our top 3 terraces to make way for 'The Nursery'. This area will once cleared and leveled will have a large poly tunnel, potting shed and fruit forest. Were extremely excited about this, as becoming self sustainable and growing our own food is high on our list of priorities. As well as using the poly tunnel to start and bring on seeds in cooler/colder weather we'll also be starting a tropical plant nursery one of my dreams. On the lower of these 3 larger terraces we will also be planting a large food forest using permaculture principles. We are now the proud owners of a stunning off grid property in Portugal, Lobateira, which we've renamed 'The Wild Lands'. We've been searching for our own slice of heaven to start a homestead. We decided to base our search around the Castelo Branco region of Portugal, as the land here is not only beautiful, but far cheaper than the Algarve. Equally, there are many off grid families in the region, and we wanted to be close to a community of like-minded people. We were 'stuck' in the UK (again) since returning to see loved ones over Christmas while we waited for our D7 Visa for Portugal. After nearly 6 months of waiting, we got to leave! This was a mammoth task as we had to transit through France to Spain in 24 hours or less! (see previous videos) Now we've finally bought our own at land in Portugal. We are currently travelling in Spain, having left the UK at the end of June. Here we cross over into Spain over the Pyrenees. We have the sad news that some of our fave park ups are no more! We get trapped in a car park AGAIN, and we realize it's been a shockingly long time since we had a 'proper' shower!
