Baby back ribs on the Bradley smoker are always a huge hit around any barbecue. This bbq rib recipe is one of the easiest and a real crowd favorite. This recipe will work on any style smoker and can be easily made in to "wet" ribs by adding BBQ sauce of your choosing about thirty minutes prior to finish. When I cook for a large crowd I will make wet and dry ribs to please any taste. Just use a small amount of mustard as binder, dust with Chupacabra Cajun rub, then a layer of Killer Hogs "The BBQ Rub", smoked approximately 4 hours at 250 degrees with Apple wood, and spritz every hour with a half and half mixture of apple juice and water and you'l have the best "dry" ribs you've ever tasted. Try this recipe and I'm sure you'll agree.

It's almost Valentines day and this surf n turf recipe is perfect for your Valentines day recipe. Just season Rlbeye steaks with your choice of Chupacabra rub. Then split your lobster tail down the middle of the shell all the way to the fin of the lobster tail. Slide your fingers between the meat and the shell on the sides and dribble about one tablespoon of melted butter with minced garlic per side. Place both on a tray and slide in your 225 degree preheated Bradley smoker. Smoke with Apple bisquettes until the lobster reaches 140 to 145 degrees internal temperature. Smoke the steaks until an internal temperature of 125 and remove and place the steaks on hot grill to reverse sear. Allow steak and lobster to rest for approximately 10 minutes and serve with melted butter with minced garlic as a lobster dip. This recipe is sure to catch the attention of your spouse especially on Valentines day.

I was asked by a number of people about if was easier to do the Dual Element Upgrade on the Bradley Electric Smoker and more cost effective. I just acquired a used 6 rack Bradley Digital smoker and decided to try the dual element upgrade. The second bradley element is mounted directly to the heat shield by drilling a hole on each side 1 inch from the front edge of the heat shield. Then using a dremel tool carefully grind out the hole to about 5/8 inch so the end of the new heating element will fit through. Then mount your new heating element and the heat shield back in the smoker with the old heating element. Using high temperature wire run a jumper wire from each end of the old element to the new element "piggy backing" the new element. Then place the digital controller / smoke generator back on the Bradley Smoker and plug it in to your power. The first run I achieved 230 degrees in 13 minutes. I then opened the door and added cold water to my water pan to see what the recovery time was and it was approximately 5 minutes to recover back to 230 degrees. Now there was some over shoot of the temperature in the smoker I'm assuming it was due to the extra heating area of having 2 heating elements. The over shoot was approximately 10 degrees. I turned the smoker temp setting to 220 degrees and it fluctuated between 225 and 235 degrees which was except able in my opinion. I will be testing it further in the weeks and months to come to give it a true test against the 900 watt Tempco element upgrade. But as far as saving time I don't think it's faster or easier to do the dual element upgrade over the single 900 watt upgrade. And the heat up time and recovery time I will have a better idea if one is better than the other this winter when temperatures get cold.

Here is a list of tools you'll need for this upgrade;
Cordless drill with drill bits
Dremel tool with grinding bits
wire connector crimping pliers
Phillips screw driver
Wire stripping pliers
regular pliers

Here are the links for the items I used to make the upgrade.

Cooking this Rack of Yak was a first for me. I had heard of Yaks but didn't really know what a Yak was. When Sunshine and Nate offered me some Yak short ribs I decided what the heck might as well. I looked on YouTube and no where could I find any videos on how to cook a Rack of Yak. I just decided to wing it and they turned out amazing. They taste some like Buffalo, some like Beef but it is some of the best meat I've smoked so far. Yak meat is more flavorful than beef. Yaks are originally from the Himalayas and Tibet. Yaks are relatively new to the United States but with the flavor of the meat I'm sure it's going to be a favorite of many before long.
I cooked the Rack of Yak for three hours on the UDS, then wrapped the ribs in aluminum foil with coke-a-cola for three hours, and then removed from the foil and coated with BBQ sauce. Then smoked on UDS until an internal temperature of 200 degrees. These ribs turned out absolutely fantastic.
I want to thank Sunshine and Nate for turning me on to Yak meat. They can be reached at https://www.Facebook.com/prairiewindyaks/
Also want to thank Audionautix for the use of their music in this video.
