Ingredients • 1 1/2 cups espresso (or strong coffee), room temperature • 2 shots (coffee liquor, brandy, rum, Irish cream, hazelnut liquor) optional • 2 Packages Lady Fingers • 6 egg yolks (large) • 3/4 cup granulated sugar • 16 oz mascarpone cold • 2 cups heavy whipping cream cold • Unsweetened cocoa powder Instructions 1. In a bowl, add the 1 ½ cups espresso and 2 shots of Brandy. 2. Dip the ladyfingers quickly into the espresso and lay them into a 9 x 13 dish creating a single lay of ladyfingers covering the entire bottom of the dish. Set aside. 3. Place a saucepan with water on the stove and start to simmer. Now in a bowl whisk together the egg yolks and sugar while over the saucepan. Whisk for 8 to 10 minutes until the mixture has lightened and heated to 135 degrease to pasteurize the yolks. Set aside and allow to cool down. 4. Once cooled mix in the Mascarpone cream cheese until well incorporated. 5. In a separate bowl, whip the heavy whipping cream until medium peaks form. Next fold the whipping cream into the mascarpone cream until well incorporated. 6. Spread half of the mascarpone cream over the fist layer of ladyfingers. Next dip the remaining ladyfingers into the espresso and create another layer of ladyfingers on top of the mascarpone cream. Take the remaining mascarpone cream and spread over the top of the ladyfingers. 7. Cover and refrigerate for a minimum of 6 hours, overnight is better. 8. After refrigerating uncover and dust the top of the Tiramisu with unsweetened cocoa powder. Serve and enjoy.
