Desi Masala Noodles are very tasty and delicious. Simple way to prepare vegetarian masala noodles. Homemade food is always better than outside food. We can prepare very easily in our kitchen. Every generation likes to have noodles. These noodles can be served anytime like breakfast, lunch or snacks or dinner time. Noodles have a special place in a kid's heart.
When we start with the masala noodles, we need to heat the pan and add garlic, ginger, and onion for seasoning. Instead of oil you can shift to butter. Then add all the veggies like carrot, capsicum and cabbage. You can add any veggies but veggies must be crunchy and don't overcook. If veggies are over cooked the taste of noodles will be ruined. Red chilli powder and pepper powder is for spiciness for the dish.
Soya and tomato sauce and vinegar give a great taste to the noodles. Masala noodles are full of spicy and garam masala flavour. You can add other spices and masala too but taste will be different. If you add cardamom, elachi, cinnamon the taste will be different and the spices will not suit masala noodles.
Masala noodles are considered as street food. You can serve with cheese and paneer for top for it. It is one kind of bachelor's food. Now a days are noodles are very comfort food for any time of the day. I have used homemade noodles, sauces for this cuisine. So everything is healthy and delicious. However this recipe does not require any veggies. If you add veggies it will be colourful and more nutritious food.

Ragi dosa is very unique and easy to prepare. Ragi / Finger Millet is healthy to our body. Yes correct! Instead of ragi flour, I used whole Ragi / Finger Millet. So it is a gluten free recipe. Ragi is finger millet and this is famous in Karnataka. In Maharashtra it's called by Nachani and Nagali in Gujarat.
The Ragi dosa is made with whole ragi / finger millet, urad dal, fenugreek seeds and salt. Soak the ragi and dal for a few hours, grind or blend it and keep for fermentation. Next day morning you can easily prepare a healthy breakfast. Ragi and dal soak separately or together for a few hours. It must be washed a couple of times. Because ragi / finger millet have more dust and unwanted things in it.
This dosa batter should be fermented. Batter should not be very thick and thin and if it is thick add some water and dilute. While adjusting with water be careful. Batter should be in a thick ribbon like consistency while spreading. Heat the iron cast tawa for dosa, spread the little oil to tawa and allow to heat. Once tawa is heated pour the batter in the middle and spread gently. Once done with spreading, allow to cook. You can apply oil or ghee on top of dosa. With the help of spatula flip the dosa and leave until for a minute.
Transfer the yummy dosa to a plate and serve with chutney, sambar or different types of jam. Dosa is most suited with green chutney. Ragi dosas colour may not be attractive but it is crunchy and tastier when it is warm. After cooling it will become soft and taste wise also it will not be so good. From this batter instead of dosa you can also prepare idli, uthappa and paddu.
Usually ragi is suggested to mothers of young toddlers. Make the powder of ragi and give it to the baby like porridge. And ragi porridge is quite popular. This is the first solid food introduced to a toddler in South India. Because it supplies all nutrition and easily digestible food.
Whole Ragi / Finger Millet is very good for our body. It will help in weight loss, help reduce cholesterol and sugar level. Ragi contains high fiber, protein and minerals, calcium, iron content and is easily digestible.

The Bhindi masala dry fry is very tasty and delicious. It is very popular in North India. This recipe is completely vegan and Gluten free. I shared how to prepare simple Bhindi masala dry with complete procedure.
The Ladies finger has many names. In that Okra, Bhindi names are famous. Bhindi masala dry is one of my favorite recipes and dishes of mine. Because it is easy to prepare and a great combination for rice and chapathi. We can prepare it for breakfast, later we can use it for lunch.
The Bhindi masala is very easy to prepare and time saver than other sabzi. This masala dry recipe features okra pods with Onion, tomatoes and some spices. While preparing the sabzi or masala dry from the Bhindi we have to fry it with oil for a few minutes. Otherwise it will become sticky, so we have to fry the bhindi pieces on medium flame. When the okra gets golden colour, take out and set aside.
The onion and tomatoes go well with masala dry. Adding a number of spices gives a good aroma to the masala. If you want restaurant style bhindi masala dry then add kasuri methi. Kasuri methi is nothing but dried fenugreek leaves. It is completely optional, but the taste is really like heaven.
The dry Bhindi masala is tasty and delicious. One of my uncles is making tasty bhindi masala. After tasting his masala I became a fan of bhindi masala. When we grow okra pods, we must do this recipe. This is one of the main recipes in the wish list and a compulsory dish also. Everyone in my family likes this recipe with chapathi and rice. The joyful moment was when I tried this recipe recently. My son also likes this bhindi masala dry very much. So I am happy to share the recipe with you.
