Ingredients - 2 and 1/2 cups All Purpose Flour 2 and 1/2 teaspoons Baking Powder 1 and 1/2 teaspoons Baking Soda 1/4 teaspoon Salt 2 and 1/2 tablespoons Sugar 1 can Sweetened Condensed Milk (300ml) 1 cup Water 2 tablespoons Vinegar 2 tablespoons Vanilla Extract 1/2 cup Melted Butter
Procedure - Preheat the oven at 350F/180C for 15 minutes. Lightly grease a 9×13 inch pan.
In a large bowl put the flour, baking powder, baking soda, salt and sugar. Mix well
Make a pit in the center of the dry ingredients and stir in the the wet ingredients one by one. Stir the mixture together using a whisk.
Pour the batter in the greased pan and tap the pan to even it out and break the air bubbles if any.
Bake it for 25-35 minutes. Transfer the pan to a cooling rack and remove the cake after 15-20 minutes.

1 Cup/120 grams Maida/All-purpose flour
1/2 cup/60 grams Sugar
1/2 Cup Ghee at Room Temperature
1/4 Cup Melted Butter
1/2 Teaspoon Baking Powder
2 Cardamoms
2 Cloves(Optional)
Procedure -
1. Pre-heat the oven to 180 degree Celsius for 8-10 minutes. Line a Aluminum tray with Butter Paper
2. In a mixer add Granulated Sugar, Cardamom, Cloves and Powder it
3. In a big bowl mix Maida, Sugar and Baking Powder well.
4. Now start adding ghee and combine well. Do not add all the ghee at once. Now slowly add Melted butter and mix until you get a soft dough. Do not Knead it...!!!
5. Divide the dough into small equal balls and place them in a baking tray. Make sure not to keep them very close since the cookies expand.!
6. Bake at 180 degree Celsius for 10-12 minutes. Slight cracks can be seen on the cookies.
7. Remove from the oven and let cool completely. The cookies will be soft and breakable when hot.
8. Serve with hot Tea/Coffee

Ingredients-
4 Chicken Legs with Thighs
For the first marination
1 tsp Salt
2 tsp Lemon Juice
2 tsp Ginger Garlic Paste
1 tsp Kashmiri Red Chilli Powder
For the second marination
2 tbsp Hung Curd
1 tsp Ginger Garlic Paste
1 tsp Kashmiri Red Chilli Powder
1/2 tsp Black Pepper Powder

4 Medium Potatoes (Boiled)
2 Medium Onions (Chopped)
Green Chilly (2 to 3 finely cut)
Oil(2 Tablespoons)
Cumin seeds (1 Teaspoon)
Mustard Seeds ( 1/2 Teaspoon)
Ginger Garlic Paste (1 Tablespoon)
Fennel seeds(1 Teaspoon)
Coriander Powder(1 Teaspoon)
Chilli Powder(1/2 Teaspoon)
Salt(To taste)
Cream or Curd(2 Tablespoons)(Optional)
Garam Masala(1 Teaspoon)
Coriander(Garnish)
Procedure -
Pour two Tablespoons of oil in a Pan and heat it. Add Cumin, Mustard and Saute until the mustard begins to pop.
Now add the Green Chilli into the pan and carefully saute until you get the Aroma.
Next add Diced Onions and Saute until golden. Add Ginger garlic paste and saute until the raw smell is off.
Add Fennel Seeds and saute for a minute.
Add Coriander powder, Chilli Powder, Salt and saute the mixture until you see the oil seperating from the mix.
(Be careful not to burn the Chilli powder, use low flame)
Now add 2 tablespoons of Cream/Curd and mix thoroughly. The mixture becomes light and Saucy. Saute for a minute.
Add Garam Masala and cook on low Flame for a minute. Add Mashed Potatoes and mix thoroughly.
Add Coriander on top to Garnish and the Aloo Masalsa/ Mashed Potato Curry is Ready.

Ingredients -
250g Gobi (cut into florets)
3-4 Green Chilli (slit)
2 medium Onions (Diced big)
3 Tbsp Oil
1/2 Tbsp Ginger garlic Paste
2 Tbsp Tomato sos
1 tbsp Soy sauce
1 tbsp Vinegar
1/2 tsp Chilli Powder
Salt to taste
Procedure -
Take oil in a pan and fry the florets until they are half done. Take them aside.
In the same pan add the Diced onions and fry them until transparent. Add Ginger-garlic paste and saute until all the raw smell goes off.
Add green chilli and Saute the mix.
Add Tomato sos, Soy sos and Vinegar and fry it in high flame for 30 seconds.
Reduce the flame and add Red chilli powder, Salt and saute.
Add the Half cooked Gobi to the Pan and mix well and cover the lid for a min.
Add Garam Masala (optional) and Kasuri methi .
Gobi Masala is Ready. Serve hot with Roti or Indian Bread.
