On the afternoon of October 22nd 2010 I thought I heard the neighbors playing rather cool drumming music at a very high volume. I went back to work and the music kept getting louder and louder. I out if curiosity I looked outside and saw this line of drummers from Meadowdale High School. Upon closer inspection I saw Brady McMahon! Chicken Marsala
Chicken Thighs pounded out - start from the center and pound toward the edges
Chicken Thighs
Mushrooms - sliced
Chicken stock
1/2 Onion chopped
Garlic
Olive oil
Rosemary (fresh)
1cup Flour
1T Salt
1T Pepper
Butter
1/2 cup Red wine - Marsala if you have it.
1/2 cup Sherry

Mix flour, salt & pepper
Pound out chicken thighs and drag through the flour above and fry in olive oil & butter - brown nicely and set aside.
Add mushrooms & onion to pan and sauté till soft.
Add 1/2 cup red wine & 1/2 cup sherry
Add 2 cups chicken stock
Make a roux and add it to the sauce to thicken the sauce
(Make a roux - sauté 3T Butter with 3T flour until thick)
Add chicken & simmer for 10-15 minutes
Top with Parsley ?

I power-hiked the 1.3 miles or so up to Haybrook Lookout Fire station. It is a very tranquil hike, quick and easy but in this video I am breathing pretty hard at times as it is steep in places.
There is lots of parking beside the trail head on Highway 2 heading west toward Stevens Pass.
There are great views of other mountains when you arrive at the top. There are even better views if you climb the fire station.

2.5 lbs (should be 1.5) Ground Pork & Beef
1/4 Cup Parmesan Cheese
1/2 Cup Bread Crumbs w/ *Seasoning
* Seasoning if you don’t have bread crumbs w/seasoning - 1 teaspoon - Parsley, garlic & Onion Powder
2 Large Eggs
1 Tablespoon Granulated Garlic or 6 Cloves Garlic (Chopped)
1t Salt
1 t Black Pepper
Mix together and cook in oven at 350 for 15 minute.
Pour a large can of Crushed Tomatoes in a dutch oven and cook on medium for 30 -45 minutes.

Shrimp Linguini or Fettuccini w/ Alfredo Sauce (Healthy)
SO the beauty of this recipe is that you use the starch in the pasta to make the Alfredo Sauce. You WON’T have to make a separate Alfredo sauce using butter and flour…so it is healthier!
1 T Olive Oil
4 Cloves Garlic
2 Cups Chicken Stock
1 Cup Milk
2 T Butter
8 oz Fettuccini or linguine
1/4 cup Grated Parmesan
Chopped Parsley
Use a large skillet
Medium High Heat
Add oil & Garlic - Sauté
To that add the chicken stock, milk, butter & fettuccine or linguine . Simmer, stirring occasionally for a half hour or until the fettuccine is covered in a thick sauce and is cooked through.
Take out if skillet and sprinkle with parmesan and Parsley.
We cook up some shrimp and place on top but Chicken would also be great…or nothing else.

Southern Italian Calabrian Sausage
11lbs meat - 2/3 Picnic Pork 1/3 Pork Belly
(Pork shoulder can be used as well)
1/4 cup Fennel seeds (not toasted)
50g Sea Salt
20g Pepper
25g Mild & Sweet Paprika
516g (2 1/2 cups) Calabrian Pepper Sauce
1/3 cup Parsley
1 Tablespoon Mild pepper flakes
Pig Intestines casing - 20 yards does
4.5g Salt/lb Meat
1.5g Pepper/lb Meat
.85gm Chili Flakes/lb Meat
2.5gm Paprika/lb Meat
1.5gm Fennel Seed roasted & raw/lb Meat
50gm Red Pepper Sauce/lb Meat
1 cup Red Wine/10lb Meat (optional)
-Grind pork on course grinding plate (large holes)
-Add Seasonings to ground meat
-Using both hands mix really well …until it is smooth and does not show the nuggets of ground meat
-Leave in fridge overnight to meld flavors
-Crush a half if
-Lime or lemon in a bowl of warm water soak the casings in it for an hour
-*Fill casings with sausage. Be sure to press the sausage out of the nozzle a little bit to aid in getting the casing onto the nozzle.

*Note - The kitchen Aid does not stuff sausages well. It is very slow and with the finer ground sausages, it is impossible…literally. So get the LEM sausage stuffer and it will be a whole lot more enjoyable.
