INGREDIENTS
• 20-40 chicken wing tips
• turkey or chicken carcass trimmed of meat
• 1 onion, root removed, cut into large pieces with skin
• 2 garlic bulbs, root end removed
• 3 carrots, , cut into large pieces with skin
• 4 celery, cut into large pieces
• 1 shallot, halved with skin
• 1 piece of fresh ginger (about 3 inches)
• small bundle of fresh herbs (rosemary, sage & thyme)
• 2 tsp whole black peppercorns
• 2 tsp dried oregano
• 3-4 dried bay leaves
• ½ cup apple cider vinegar
• salt, to taste
• a few quarts of water, to fill pot fully
