Beef burritos are easy to make, healthy and delicious. You can easily change up but adding rice and/or beans or feta and shredded lettuce is a favorite of ours. You can also wrap up and then toast slightly on both sides. Hope you enjoy. I apologize if you watched already, I am still learning how to do this.

Hi everyone,
I apologize for these taking so long but many reasons (excuses really). I will have these come more often. I would appreciate feed back if you like this style of video for simple foods? I will do videos showing more when I do videos for specialty items (like the bison steak one) that everyone will need to see easy techniques for best outcomes, examples like: cooking chicken/turkey on BBQ, Ribs, rubs, marinades or anything that it makes a difference for how you do it.
Also note: I rarely prepare everyday items (rice, potatoes, pasta, salads, soups or stews) the same way twice. Whether it be needing to enlarge recipe for more people, missing an item (plan to do an informative video on substitutions), change flavors to compliment the other menu items or just simply to change it up a little so it doesn't get boring. I will give a couple sub possibilities in each video and later blow your mind by completely changing it up in another video.
Pretty much everything I cook has to be healthy (diabetic friendly - low fat, low sugar, low salt). But there will be some controversial items (for example white rice or pasta) that experts disagree on and our own experiments with how these affect sugar levels multiple times. I am not an expert, final direction should come from your medical advisor who knows you and can access your current lab results because these affect their advice. If there are issues that contradict what you have been advised by your doctor, always follow your doctors advice but I am happy to explain my reasons if you are curious. Also everything has to be quick and easy prep where I do not have to sit for extended periods of time, because my back won't tolerate that. Also everything can be prepared in your house, RV or in your van by stove or BBQ (it's crazy but many items traditionally prepared in an oven can be baked or roasted in a BBQ).

So this was a family meet up (pre lockdowns). I love seeing caves and sadly I have never really explored caves at all. We were able to see the big cave and the entrances to some smaller ones but only our daughter Jacquelene and Alex were able to check out the real cave. After climbing up the rope ladder they were able to see that they required a lot more equipment to fully check out the main cave that takes you through the mountain, so they will return to explore further. This was amazing, I wish I could explore more but squatting to exit the big cave (where you can stand inside, was the most I could manage. We hope this helps you enjoy these areas with us.

Hi everyone, this was our first request, Eddy insisted I get done asap, so we hope you like. This is really one of the best recipes we have ever made and it is the perfect time of year to make this.
The Dutch oven (aka cast iron pot) is heavy and probably the only semi contentious item in our van. It is heavy, but can be used over fire if need be. Plus with no oven we use this a great deal making soups, stews, chilli and Sheppard's pie etc.
So, with the cast iron pot we add the veges, heat to a boil and turn off the heat source. Let it sit overnight, then in morning will heat to bring and shut off again. All ready to warm and serve for lunch or dinner. The cast iron holds heat for a long time, slow cooking the veges. You won't need to use so much propane if that is your heat source (leaving it on for so long can make place very damp. Plus stew is always best eaten the next day.
Tips:
Salt and pepper are to taste and you can add a pinch of cayenne pepper if you want a little heat.
We usually add a few mushrooms when almost ready.

Showing how this recipe can be easily made with precut veges and seasonings so that it takes less effort. We want to encourage people to cook in their vans and with a couple cheats we know more will be willing to try.
Makes about 6 servings
Ingredients
4 large or 6 medium potatoes
1lb ground beef (lean or extra lean)
1 bag precut veges
(Onions, peppers, carrots, celery)
6-7 cloves of fresh garlic or 2-3 Tbsp Garlic PWD
1 pkg Shepherd's pie seasoning (or paprika, salt, pepper to taste)
6-8 med mushrooms sliced
1 can corn or peas
Peel and cut potatoes into large chunks and put to boil in salted water.
Place hamburger in pan and brown evenly.
Mince garlic and add with mixed veges to hamburger, add seasoning pkg and mix well.
Allow mixture to simmer 15 mins until veges soft, add mushrooms and corn or peas.
Drain potatoes, mash with 1/2 small container of sour cream until smooth and fluffy.
Smother meat mixture with mashed potatoes and allow all to simmer 10-15 mins.
Enjoy.
