Prof. Jeffrey M. Pilcher (History Department, University of Toronto) opening presentation at the ORIAS Summer Teachers’ Institute “Foodways in World History” on July 21, 2014. Public interest in food has grown tremendously in recent years, and schools have been an important focus of this concern. Prof. Pilcher suggests three ways in which food can be investigated in a classroom setting: first as a lens—a means of thinking about other topics; second as a topic in itself; and finally as a material—the consummate “active learning tool.”
