Nothing is quite as good as #homemade #bread. Probably the oldest known form of bread is #sourdough bread. In this video, Ken shows how he makes sourdough bread.
For Ken's #sourdoughstarter, he used a combination of whole milk with all-purpose flour. As he notes, this starter was originally made back around 2018. To make it, Ken mixed sour cream (with active bacterial cultures) with flour and left it in a container on a heating pad. According to Ken, since sourdough is a combination of yeast and bacteria, adding the milk into your starter gives you a better result.

Ken's Sourdough Bread:
1/2 c. Sourdough Starter
1 1/2 c. Whole Milk
1 TBSP Cooking Oil
2 3/4 to 3 c. Unbleached Enriched Bread Flour
1 TSP Sea Salt
(NOTE: For best results, consider using a quality stand mixer with a dough hook attachment when mixing). Mix the sourdough starter with milk, cooking oil, salt, and 2 1/4 cups of flour. You'll want to mix for several minutes until the dough has the consistency of wet concrete that's setting up and you can feel a resistance where the protein structures are forming. Place plastic over the bowl and allow to sit in a dark, warm location until the dough is about doubled in size. Add another half cup of flour to the dough and knead for a minimum of fifteen minutes. Because this is a high hydration dough, it will not make a pane-like effect usually. When properly kneaded, the dough will form a ball but start to sag when laid down, and it will pull away from the hands or utensils with minimal effort. Line a Dutch oven with partchment paper, form the dough into a ball, dust the dough ball with about 1/8 of flour, and place the dough ball into the Dutch oven. For a higher loaf, use a Dutch Oven less than seven quarts in size. Lid the Dutch oven, place it in a warm location, and wait until the dough doubles in size. Lightly punch down the dough, using a picking and poking motion with one's fingers, to give the bread's crumb a more artisenal look. Relid the Dutch oven and let it double again in size. Preheat an oven to 450°F. Using either a bread lame, razor blade, or serrated knive; cut a vent line about a quarter of an inch in depth across the top of the loaf. Make sure to cut at an angle. Place the lidded pot into the oven and bake for 20 minutes. When done, remove the lid, place back in the oven, reduce the head to 400°F, and bake another 15 minutes. Remove the bread from the Dutch oven onto a plate, or preferreably a cooling rack, and allow to cool completely before slicing.

In this video, Ken shows how to make #deviledeggs two ways. As Ken notes, deviled eggs are a classic. Ken also uses deviled eggs as a lesson in #cooking and how a great cook worries more about proportions than using a #recipe.
For the traditional recipe, Ken says he looks at the amount of #egg yolks to create his ratios. So, based on a 1:1 of yolks to adjuncts, Ken's formula is 50% in mayonnaise, 33% in sweet pickle relish, and 17% yellow mustard.
Ken's Southern-Styled Deviled Eggs recipe is a no nonsense #southerncooking #sidedish is great for any #Thanksgiving or #Christmas celebration. Then, using this recipe as the base, Ken shows how to make a kicked-up version.
Ken's Southern-Styled Deviled Eggs:
2 1/2 to 3 dozen Eggs
1 cup Blue Plate Mayonnaise
2/3 cup Sweet Pickle Relish
1/3 cup French's Yellow Mustard
Hungarian Sweet Paprika (Garnish)
Place the eggs in a large pot. Fill pot with water until an inch of water is covering the top of the eggs. Boil the eggs for 10-12 minutes. Drain water off the eggs and place in an ice bath to cool 5-10 minutes. Peel the eggs, slice the eggs in half, place the whites in a deviled egg tray, and place the yolks in mixing bowl. Add the mayonnaise and mustard to the yolks. Use a fork or electric mixer to mash up and mix the yolks with the condiments. Add in the relish and mix. Pour 2/3 of the mixture into a quart zip top bag and refrigerate (with the whites) until about ready to serve. When ready to serve, cut about 1/2-inch of the bottom tip off the bag and use the bag to pipe the filling into the eggs. Sprinkle the top of the eggs with paprika.
Ken's Kicked-Up Deviled Eggs:
1/3 remainder of Southern-Styled Deviled Egg Filling
12 oz. Bacon, Cut into Lardons
Finely Chopped Hot Peppers, to Taste
2 tbsp. Blue Plate Mayonnaise
1/2 tbsp. French's Yellow Mustard
Fry out the bacon until brown and crispy. Remove from pan and drain on a plate lined with multiple layers of paper towels. Add mustard and mayonnaise to the filling along with the peppers. Place the cooled bacon in a quart zip top bag and crush the bacon into small pieces. Mix half the bacon into the filling. Place the filling into a marked quart zip top bag and chill until ready to serve. Cut a 1/2-inch section off the corner of the bag and pipe the filling into the eggs. Garnish with the remaining bacon.

KEN'S HERB & CHEESE #POTATO #CROQUETTES
2 to 2 1/2 c. #Leftover #MashedPotatoes, Salted and Seasoned
1 to 2 #GreenOnions, Chopped
1 to 2 tbsp. #Parsley, Chopped
1 to 2 c. Co-Jack #Cheese, Shredded
1 to 2 tbsp. #Dill Weed
3-5 tbsp. #HalfandHalf or #Milk, as Needed
1 to 2 tsp. #Onion Powder
1/2 to 1 tsp. #Garlic Powder
1/2 c. Self-Rising #flour
1 #Egg
1/2 c. Whole Milk
4 oz. #Panko #BreadCrumbs

Mix the mashed potatoes and #herbs together. If needed, thin with milk or half and half. Cover with plastic wrap and let sit for an hour in the refrigerator. After this time has elapsed, uncover and adjust flavorings with salt, #blackpepper, onion powder, and garlic powder. Portion off and make into balls by rolling with wet hands. The balls can be anywhere from the size of #quaileggs to that of a large #chicken egg. Smaller-sized portions need more cheese. Place the seasoned mashed potato balls on a parchment paper-lined sheet tray and place in a freezer for 1-2 hours, minimum. Place the flour in a zip-top bag. Beat the egg with the whole milk in a medium-sized bowl. Roll the frozen balls flour, shake off the excess flour before rolling in egg wash, strain off the egg wash from the balls, roll back in the flour, shake off excess flour when retrieving, and place back on the sheet tray with parchment paper. Place bread crumbs in the bag that had the flour. Season well with salt and pepper and shake to incorporate. Roll the floured balls into the egg wash, and retrieve and strain off the remaining egg wash before tossing and rolling the balls in the bread crumbs. Repeat the last procedure of egg wash and another breadcrumb layer before placing back onto the sheet tray. Deep fat frying is the preferred method of cooking. The preferred method is to par-cook the croquettes in oil at 250°F, retrieve and strain off the oil, place the par-cooked croquettes on a cooling rack over a sheet tray lined with multiple layers of paper towels, and then do a second cook at 350°F to make brown and crispy. Serve hot. These make great for a great #sidedish and are awesome with #Manchester eggs (video forthcoming) or for a #superbowl or #tailgating #party. This dish can easily be converted into a #vegan recipe using vegan cheese, plant-based milk alternatives, and plant-based egg alternatives.
