材料 - Ingredients:
豬膏 Pork Fat - 1塊 pcs
或油 Or oil - 適量 QS
雞蛋 Egg - 1隻 pcs

做法 – Methods:
1. 先清洗新鑊, 用大火燒鑊的每一邊至出煙(一定要開抽油煙機!!!), 用豬膏或油先在鑊表面均勻地抹1次, 之後冷卻, 再次清洗;
Wash and Clean the new wok first, burn each side of the wok(without oil!!!) with high heat until smoking (be sure to turn on the range hood!!!). First wipe the surface of the wok evenly with Pork Fat or oil, then cool down and wash it again;

2. 再次用大火燒至鑊出煙, 之後再用豬膏或油在鑊表面均勻地和薄薄地抹上1層, 然後用大火燒至乾身(中途千萬不要清洗), 重覆約3-5次;
Burn again the wok with high heat until smoking, then use Pork Fat or oil to wipe a layer evenly and thinly on the surface of the wok, then use high heat to dry (don't wash halfway), repeat for about 3 -5 times;

3. 3-5次之後, 關火待鑊冷卻, 之後再清洗一次。
After 3-5 times, turn off the heat and wait for the wok to cool down, then clean it again.

4. 最後用大火燒熱鑊, 在不加油情況下煎雞蛋, 如不黏底, 即代表已完成。
Finally, heat the wok with high heat, and fry the eggs without oil. If it does not stick to the bottom, it means it is done.

注意:
1. 不可在鑊還在熱的時候沖水, 有機會導致鑊會爆裂!!!
Do not flush the wok while it is still hot, as this may cause the wok to burst!!!

2. 千萬不要拿易潔鑊/不黏鑊去開鑊, 會燒壞途層導致黏底!!!
Do not season non-stick wok, it will burn the coating and cause the bottom to stick!!!

3. 不要用鋼絲刷去刷鑊, 會刷花表面和途層, 會導致黏底和生鏽;
Do not use a wire brush to brush the wok, it will break the surface and the coating, which will cause sticky bottom and rust;

4. 可隔幾個月至半年再上一次途層, 如果有生鏽或黏底情況, 可到五金鋪買0號或最幼身的鋼絲綿/鋼絲絨(不等於鋼絲刷!!!), 把途層定全刷去, 之後重新開鑊一次。
It can be season again every few months to half year. If there is rust or sticky bottom, you can buy No.0 steel wool(not equal to a wire brush!!!) at the hardware store. Brush off all the coating, and then season the wok again.

5. 最後, 每次用完後, 要是用火燒乾表面的水份, 以防生鏽。
