Garlic & Cumin Infused Hummus Dip
Hummus should always be prepared in a manner to please your personal tastes. I prefer mine to be bursting with garlic flavor and a slight grainy texture, while others may prefer a smooth creamy consistency….. You’ll need to taste it often while preparing, and adjust seasonings according to your preferences. My recipe is below but I tweak it every single time. Here’s a great tip… Tahini paste tends to be thicker in bottom of container from sitting, stir it well before using.
Ingredients
1 - 14 oz can whole chick peas
2 cloves garlic, roughly chopped
4 tbsp tahini paste (sesame seed paste )
5 tbsp fresh lemon juice
1/2 tsp cumin powder
1 tsp salt, plus more to taste
1/4 cup quality extra virgin olive oil ( not flavored olive oil )
Water ( for thinning if required )
Fresh Parsley, chopped and paprika for garnishing
Directions
Drain and rinse the chick peas well, reserve about 1 tbsp of whole chick peas for later.
In a food processor with a metal blade combine; chick peas, olive oil, garlic, tahini, lemon juice, salt, and cumin. Process mixture until combined well but not pureed, about 10 seconds in most processors.
Your hummus will be thick and grainy at this point so you’ll want to smooth and thin it out a little bit at a time, we do this by simply adding a little more olive oil, lemon juice, and water, 1 teaspoon of each and then processing for about 5 seconds. Continue doing this until your desired consistency is reached, remember to scrape down the hummus from sides of the processor as well.
When desired result is reached you’ll need to taste for seasoning, saltiness adds depth and brings all other flavors into the big picture, so add a bit more and pulse a few times if you cannot distinguish any saltiness while tasting.
Remove hummus from the food processor and place in the middle of a nice oval or round plate, then spread it out a little bit leaving a slight indentation in middle. Inside that indentation place the whole chick peas you reserved directly in the middle and a good drizzle of olive oil, followed by a healthy sprinkle of paprika and chopped parsley.
Serve with warmed pita, sliced English cucumber, cherry tomatoes and any other crunchy vegetable.
