Let me first say, I absolutely LOVE eating at the Cheesecake Factory! Every time we go to the mall, this is where we have lunch.
But let me ask you, do you ever wonder why Cheesecake Factory doesn't put the fat grams or calories on their online menu? I am sure you can figure this out....it's because they are sooooo high in both! Why do you think everything tastes so good?
And then they ask you if you would like a piece of cheesecake to top off that fat laden meal. Really?
In this week's recipe makeover, my lightened up version of the Cheesecake Factory's Santa Fe Salad will save you over 335 calories and 19 grams of fat. And with the added bell peppers, the nutrition is increased giving you a healthy salad.
For a low carb version, eliminate the beans and corn. Replace with 1/4 avocado sliced.
