The Auberge of the Flowering Heart by de Groot and The Pauper's Cookbook by Innes showing the two sides to 'country cooking'. The de Groot book is about using local produce when in season in sophisticated meals whereas the Innes book is a somewhat coarse type of cookery where nutritional satisfaction is replaced by stuffed stomachs. Jocasta Innes has more humor but she's bought into ideology as well; de Groot however gives you the history of the place, tells you what he does during his trip and tells stories that explain the menus. Both have recipes and full instructions. Since I adore M F K Fisher, I prefer the de Groot. They both are available in print only from online sources.

Misguided people often like to cite other misguided people because doing the actual research can be time consuming and requires reading, and understanding, a lot of biochemistry. The often cited 'dangers' are, in fact, 1. only apply to certain people, 2. temporary as in during adaptation, 3. usually caused by one thing which is 4. easily 'cured'.
