Methi dal is one of the very simple recipe. This dal is super tasty and very much healthy to our body. We can prepare the dal for daily meal in every house. Few changes in the normal dal recipe i have done here. I usually prepare dal for steamed rice and jeera rice. The combination for dal and rice is mouthwatering.
Normally, dal is prepared with lentils like toor dal, green gram dal. I have used toor dal and methi leaves for making super healthy dal. Methi leaves are usually a little bit bitter in taste but when you are roasted and added to dal it gives a good taste to the dal. Because of the bitterness of fenugreek leaves, add the little tamarind extract to the dal for great taste.
Consuming of leaves is very good for health so this is best option to use the leaves. Dal recipe is changes in the region wise.
While making the Dal cook any lentils with sufficient water and turmeric until it cooks in the pressure cooker or the normal pan. The dal must be well cooked, otherwise mash the lentils using mixer or wired whisk.
Later for dal in the kadai heat the oil and onion and garlic, and various spices and roast it well until aroma will come. You can use green chilly or red chilli powder for spiciness of dal or use both, it is completely optional. Roast the fenugreek leaves, finally add cooked toor dal and mix well and boil for a few minutes.
Tasty and Super easy dal is ready. It is best to include in your diet. This is serve with rice, jeera rice, roti, chapathi etc. Most of the restaurants serve the dal in the thali or for roti’s.

Mangaluru Cucumber Ivy Gourd Curry is curd or yogurt based curry. Mangaluru Cucumber and ivy guard combination is always a hit. This curry is very simple and easy to prepare. In our region this combination of Kayi huli is very famous.
In our region, we call this curry by different names like Kayi huli, majjige huli, Melara, Puli kajipu. This curry is traditional and authentic too. In my home also this curry is the most common one.
This curry is a mixture of coconut and buttermilk. Kayi means coconut and huli means sour buttermilk, so we call this curry as Kayi huli or majjige huli.
This curry is no need much ingredients. With minimal ingredients and spices this curry can be prepared. This is best curry for everyone. This curry is less spicy gravy and children also like this.
For preparing this curry there is no need to roast any spices. The Cucumber and ivy guard take equal amount for this recipe or you can vary the proportion. The veggies are cooked with little salt, no need to add other spices.
This curry needs fresh masala, grinding grated coconut and green chilly. Then added ground paste of masala and checked the consistency. Then boil it for a few minutes.
The Majjige huli is goes very well with steamed rice, dosas. In Mangaluru - Udupi region this is a common recipe, so i no need any preparations for doing this recipes. I love this recipe, because it is simple and not harmful to the body and enriches fiber, nutrition.
This curry tastes yummy and mouth-watering. My family members also loving this recipe. You can try the same recipe by using other veggies like ash gourd, long beans, brinjal and many more.
In our community this combination of Majjige huli is a must in every function. Now some people are changing the combination of veggies but majjige huli is a must. Without majjige huli function is incomplete.
For this recipe we are using fresh coconut which is not fully dried and if we use freshly grated coconut the taste of majjige huli becomes tastier. You can serve this curry with any cuisine.

Banana paratha is a very good and tasty recipe. Usually paratha is made with aloo or other vegetables. Today I tried a ripe banana paratha, the outcome was so tasty that's why I am sharing this recipe with you all.
Every house has plenty of ripe bananas, always worried about how to finish this ripe banana. The simple solution is banana paratha, because this is tasty and all age generations can eat it, children will love the Paratha. Easily finish the ripen banana.
Usually Paratha are preparing, kneading, stuffing, rolling, cooking so many procedures are involved. But this banana paratha is not a stuffed one, so it is easy to prepare and roll. This paratha is a little sweet in taste. For more flavor you can add cardamom or elaichi powder while preparing the banana mixture. Jaggery is sweet so adding less or more is completely your choice.
This Banana paratha is a combination of ripe banana, coconut and flour. If we need then add water otherwise we cannot prepare the proper dough and rolling will be really a difficult job. My suggestion is Cooking the paratha using ghee will give a rich and authentic taste.
We can prepare this Banana paratha for breakfast, lunch, and dinner. It works great for lunch boxes too. Kids will love this paratha so easily we can pack it into their boxes. Banana paratha is served with curd or pickle or extra some ghee. All the combinations will hit directly to our taste buds. Plain banana paratha also has a good aroma and good taste.

Everyone use ridge gourd for stir fry, curry and other recipes. While doing recipes we will be removing outer harder layer later it’s discarded as waste. I tried this recipe from outer harder layer of ridge gourd. Every part of ridge gourd is used for cooking. We can call it delicious recipe from discarded vegetable. By using peels of ridge gourd we can prepare chutney, stir fry and more recipes.
Ridge gourd peel dry chutney is served with dosa, idli, rice and more. We need to chop ridge gourd peel into small pieces. Roast the red chilly and chopped ridge gourd peel with little oil. Dry the grated coconut and curry leaves separately. Salt, jaggery and tamarind added to the taste. Grind all the roasted ingredients as dry. If all ingredients roasted properly we can store it outside up to one week otherwise we need to refrigerate.
Red chillies give nice colour and spicy flavour to this chutney. Jaggery is completely optional for this recipe. Tamarind is reducing the acidity from the recipe. We need to fry or roast the chopped peels of ridge gourd otherwise it will not give texture to this recipe.
Actually peels are rich in fiber and other nutrition. After preparing this dry chutney you can never tell this chutney made from discarded item of vegetable. Any time it will be delicious and well done texture. The taste of this ridge gourd peel dry chutney is spicy and tangy flavour.

Since my childhood I know about coconut milk but never seen coconut flour being used.
