I must say this recipe is very popular among the Southern Kaduna people of the Northern part of Nigeria.
It’s prepared for different occasions like weddings, sendforths, Tribal meetings, Traditional marriages, etc.
INGREDIENTS 4 handfuls of washed bitter leaves 5 chili pepper 12 habanero pepper 2 cups of groundnut 4 small size onion 2 seasoning cubes Salt 3 tbls of vegetable oil
Tuwon Garin Shinkafa also known as Rice Flour Swallow.
It is prepared using the flour from local rice. It is quite easy, simple and also very fast to prepare.
The method of preparation, is same as tuwon semovita or masara.
It’s prepared to be eaten with soup of choice. but I can say so far, that draw soup is the best and because of the smoothness of the swallow, it makes it very compatible with draw soup.
Tuwon garin shinkafa is mostly prepared and eaten in the middle belt part of Nigeria.
To prepare your flour, you need to repair the local rice and pick any form of dirt, wash and spread to dry.
When its all dried up, turn in a bowl or small bucket and take for dry grinding.
After grinding, sieve the flour before using it to prepare your swallow.
The quantity to prepare depends on the number of people you are cooking for. I will be preparing for the whole family today so I will be using 8 cups of local rice.

Kunun Doro is a special drink prepared mostly in the Northern part of Nigeria, particularly among the Southern Kaduna people in Kaduna state.
It is prepared using Bajra millet which is known as Doro in Hausa, Guinea corn and other herbs or spiced ingredients.
To prepare this drink, the first process is the removing of the coat of the Millet and Guinea corn which is known as Tsurfe in Hausa and that is done by pounding.
The pounding of the grains is done separately. Before you begin pounding, sprinkle a little water and continuously as you pound.
Apart from the uncoating of the millet and the fact that Kunun Doro is not sieved when cold, the method is the same as making Kunun Zaki.
