Used mustard as the binder on the ham.
Cover Spiral Ham with just Brown Sugar.
Let the Char-Griller get up to a god stead heat
Put Spiral Ham in Te Char-Giller 980
Smoked until internal temp reach 135 and put on a coat of glaze. Added another coat of glaze to the Ham about 5 minutes later.

Nice 10 Pound Ham Smoked in the Pit Boss Pro Series 1100.
Created the glaze and did it how I wanted with what I wanted, do it your way however you like.
Set Pit Boss to 225 (Should have had it at 300) and let it go for about 2 2/1 to 3 hours and then turned it up to 300 until the internal temp reached 140 degrees.
Sliced it up and had a great pre-holiday dinner.

Took about a total of 6 hours to smoke this small 3.07 pound brisket.
Rubbed with AP and Jack Daniels Beef Rub

Smoked Turkey Hot & Fast
Ingredients -
1 - 12.49 Pound Turkey
1/2 Cup Mayonnaise
Rib Rack Chicken Rub
2 - Cups Chicken Broth
KosmoQ Chicken Injection
Cut Up Oranges and Apples
Directions -
Fire up Pit Boss 1600 Elite to 375 Dgrees.
Stuff Turkey with Oranges and Apples
Inject with CosmoQ Chicken Injection
Mix Mayonnaise with Rib Rack Chicken Rub and slather all over the turkey
Place Turkey in the Pit Boss 1600 Elite Grill.
Check on turkey after 1 hour and rotate to get an even cook.
Pull off once internal temperatures reach 165 degrees.
