I have modified this particular recipie quit a bit to match it to a High Carb Low Fat Low Salt diet (witch is the healthiest diet in the world), and to the fact that I don´t have all the ingredients. So this is not her original recipe. For her recipe, go to her website.
The HCLF-recipe, Sliced Pad Thai:
Slice up and add to the pan:
3 carrots, 1 onion, 2 tomatoes and 4 onion boats.
Fry this in the pan at high temperature.
Add 1 package pre socked noodles, and mix
Add some sugar, spring onion, nuts (cashew or peanuts), and add some chillies or chilli powder, and squeeze the juice out of a lime.

My Massaman Curry recipe, inspired by May Kaidee, but modified to be more high carb low fat (HCLF/ RT4) and to match the ingredients I could find in Norway.

Recipe Massaman curry:
In a preheated pan with som water add chopped up vegetables:
-1 carrot
-1 onion
-1 tomato
-2 teaspoons chilli paste/ curry paste
-4 teaspoons curry powder
Fry for some minutes at high heat. Add more water if it gets to dry, but don´t boil the vegetables.
-After 3-4 minutes, add 100 ml of coconut-milk (one small can), and about 100 ml of water too (water evaporates, do don´t worry.
Cook until tick (at least a bit thick). 5 minutes?
- Add 3-4 spoons of low sodium soy sauce (add less if you don´t like salt).
-2 spoons of sugar
-1 steamed sweet potato
Mix and heat for 2-3 minutes.
Remove from heat, and squeeze some lime on top.
Eat and enjoy :-)
This recipe should be enough for several meals or persons if you combine it with rice.

—Chili Paste—
In a pan fry (with water, not oil):
One table spoon of:
Lime Leaf, Galangal, Lemon Grass, Onion, Garlic, Cumin Powder and Coconutmilk.
Also add 1/2 tablespoon of soysause.
Fry for some minutes at high heat, then blend the ingredients together with a small blender or a morter and pestle. The paste should be like a paste; smooth.
Or just buy it in the shop :-)

I'm hiking the El Camino in Spain, and this is what I bring with me. I would not call myself a minimalist, but having to carry everything you bring with you makes you bring less stuff.
Packing list:
40 liter backpack
Cloths (including the ones I'm wearing):
7 Boxers (6 would have been enought, can wash in sink)
3 T-shirts, one of them a workout one
5-6 Socks (4 would have been enough, don't need to use socks in shoes)
2 Shorts
Hat, arm sleeves and neck cover for sun protection
Small towel (small is enough, did not need big)
Ticker sweeter
Rainresistant workout pants
Rainproof jacked
A scarf
Pysjamas pants (really saved me when getting sunburned on my legs and had to continue walking)
Flip-flops
Jogging shoes for the hike
Baggage weight
Small day-trip backpack (did not need)
Accessories:
Sunglasses, charger, battery pack, phone, toiletries, glasses and sunglasses with strength
Others:
Self inflatable sleeping mat, sleeping sheets
Most of these things actually came in handy at least parts of the trip.
It’s really recommended to travel light as you have to carry everything with you the whole trip. Travel so that you can carry everything with you on the airplane without checking in the luggage (less then 7 kg). When you do that it’s a fantastic trip, really recommended :-)

My Norwegian version of the recipe:
Put oven at 225 C / 437 F
-Mix 1 cup of water and one cop of flower.
-Add a bag of broccoli and cauliflower, about 500g (must taw from freezing before using it).
-Have one cup of breadcrumbs in another bowl
-Follow video instructions. Should be about 30 minuttes in the oven
