Last weekend we hosted our first Homesteading Workshop Day. It was a great success and we'd like thank all that attended including Margaret's Kitchen in Roscommon for providing fresh savory scones and apple pies. We were teaching the basics in 6 different workshops to give participants a basic understanding and ideas to research further. These include growing food using no dig gardening, preserving food, keeping chickens, herbal remedies, backup power & lights and homebrewing beer, wine and cider. What's the worse weed in your opinion? Let us know below! I believe we have found a new contender. :D Pioneering weeds are natures repair mechanism, for example tap rooted plants are good at breaking up and draining the soil. A lot plants are considered weeds because they spread quickly. A lot of them are actually edible and often even medicinal such as dandelions, plantain, sorrel and nettles. When practicing no dig gardening, weeds and grasses are generally not a problem and even when they occasionally pop up in a garden bed they are very easy to pull up. There is just one weed that is proving a real challenge! :D

In this video we’re talking about 5 medicinal herbs that help your body fight viruses and bacterial infections. These herbs also help to clear congested lungs. Some of them are known as culinary herbs commonly used in cooking, but often underrated for their medicinal properties. You can grow them at home in your garden or in pots on a window sill. Some are perennial meaning they will grow for many years and you can harvest their leaves for most of the year fresh without having to dry them. We were at the Athlone Apple Day last Sunday. It's a harvest festival celebrating an abundant Autumn and bringing the community together to enjoy all things apples like juice and pies.
