This pumpkin pie cake recipe with pumpkin pie spices will get gobble up at your Thanksgiving gathering. Enjoy the cake layer by itself with a cream cheese frosting. Or, add the pumpkin pie and crumble layer for over the top pumpkin taste! This cake is a great alternative to the traditional pumpkin pie. Enjoy and happy baking in your rice cooker!
EASY RICE COOKER CAKE RECIPES: Pumpkin Pie Cake Recipe
INGREDIENTS:
Cake Layer:
• 1/2 cup (115g) PUMPKIN PUREE, fresh or canned
• 1 cup (220g) BROWN SUGAR
• 1/2 cup (115g) UNSALTED BUTTER (super soft)
• 3 EGGS
• 1 1/4 cup (150g) CAKE FLOUR
• 1 tsp (4g) BAKING POWDER
• 1/2 tsp (3g) BAKING SODA
• 1 tsp (3g) GROUND CINNAMON
• 1/2 tsp (2g) GROUND GINGER
• 1/8 tsp GROUND NUTMEG
• 1/2 tsp (4g) FINE SALT
Pumpkin Pie Layer (optional):
• 1 cup (230g) PUMPKIN PUREE
• 1/4 cup (45g) BROWN SUGAR
• 1 tsp (3g) GROUND CINNAMON
• 1/4 tsp GROUND NUTMEG
• 1/4 tsp GROUND CLOVES
• 1 tbsp (13g) VANILLA EXTRACT
• 1 EGG
• 1/4 cup (60ml) MILK
Crumble Topping (optional):
• 2 tbsp (30g) BROWN SUGAR
• 1/2 cup (50g) CAKE FLOUR
• 1/3 cup (30g) CHOPPED WALNUTS
• 4 tbsp (60g) BUTTER (cold)
HOW TO:
1. Make the cake layer; mix pumpkin puree, melted butter and brown sugar until blended. Then add one egg at a time and mix
2. Sift in the rest of the ingredients for the cake layer and mix until incorporated
3. Line rice cooker pot with baking/parchment paper and pour cake batter in, distributing it evenly onto the bottom.
4. Now mix pumpkin pie layer ingredients together in a bowl until blended and pour it on top of the cake batter; distributing it as evenly as possible
5. Mix the crumble topping in a bowl until almost all the white flour is gone. Drop it on top of the pumpkin pie layer
6. Put a paper towel/napkin on the pot before closing to catch condensation
7. Bake it for 3 COOK CYCLES (1 1/2 hr), then check with a toothpick. The sides should come clean but the center may still have some batter on it. If the sides are still wet then bake it a 4th cycle if needed.
8. Let cake cool for 30 minutes before serving.
OVEN BAKING:
1. Bake in pre-heated oven for 350F (180C) for 25-30 minutes (times may vary depending on oven). Check after 25 minutes with toothpick test.
2. Let cake cool for 30 minutes, during this time it will continue to bake and set the center.

EASY RICE COOKER CAKE RECIPES: Thai Tea Cake Recipe | Halloween Cake Idea
INGREDIENTS:
THAI TEA:
• 1 1/2 cup (370ml/385g) EVAPORATED MILK (one can)
• 6 tbsp (35g) THAI TEA LEAVES
CAKE:
• 1 1/4 cup (175g) CAKE FLOUR
• 1 tsp (4g) BAKING POWDER
• 1/2 tsp (4g) BAKING SODA
• 1/3 cup (85g) UNSALTED BUTTER (room temp)
• 1/4 cup (40g) ICING SUGAR (packed cup)
• 1 EGG
• 1 cup (250ml) THAI TEA MIX (from above)
• 1/2 cup (160g) SWEETENED CONDENSED MILK
HOW TO:
1. Brew tea, bring milk and tea leaves to boiling, either in the microwave or in a pot over stove burner, then take it off heat and stir. Cover and let it steep for about 20 minutes
2. In a small bowl, mix flour, baking powder and baking soda until thoroughly combined, about 1 min
3. In large mixing bowl, beat butter and icing sugar until light and airy, about 2 minutes
4. Add egg and beat for another 2 minutes, until light in color
5. Strain or drain your tea and measure out 1 cup (250ml) for the recipe. If your tea mix is a little less, add some water to get the amount needed
6. Add the sweetened condensed milk into the tea and mix to combined
7. Sift half the flour mixture into the batter and pour half of the tea mix, beat for 30 seconds. Add the rest of the flour and tea mix and beat for another 30 seconds, until combined
8. Lined pot/pan with parchment paper and pour in batter; shake and tap the pot to distribute the batter evenly
9. Bake for 3 bake cycles (1 hr 30 min). Rice cooker varies so check after 2 bake cycles and bake longer if needed
10. Cool completely, if decorating, about 2 hours
OVEN BAKING:
Bake in floured and lined pan, in pre-heated oven of 350F (170C) for 35-45 minutes. Ovens varied so check about 30 minutes and bake longer if needed

I needed to use up some ingredients and this healthy cookie was just perfect. It's satifying and a perfect snack for any time. Use whatever nuts and seeds you have on hand. Double or Triple the recipe for larger quantities. Enjoy!
Vegan Oat Cookies Healthy | Easy Gluten-Free Trail-Mix Cookie Recipes | EASY RICE COOKER RECIPES
NOTES:
* 1 cup = 250 ml
* My rice cooker capacity = 1 litre or 5 cups
* Please READ Important TIPS at the end of each video
INGREDIENTS:
• 1 cup (100g) ROLLED OATS
• 1/2 cup (55g) ALMOND FLOUR (ground almonds)
• 1/4 cup (25g) GROUND FLAX SEEDS
• 1 tbsp (12g) CHIA SEEDS
• 1 tsp (5g) BAKING POWDER
• 1 tsp (3g) GROUND CINNAMON
• 1/4 cup (70g) MASHED BANANAS (1 large)
• 1/4 cup (80g) MAPLE SYRUP
• 1/4 cup (60ml) ALMOND MILK
• 1/4 cup (60ml) COCONUT OIL
• 1/2 cup (65g) DRIED CRANBERRIES (no sugar added)
• 1/4 cup (35g) SUNFLOWER SEEDS
• 1/4 cup (40g) PUMPKIN SEEDS
• 1 tbsp (10g) BLACK SESAME SEEDS (optional)
• 1/4 cup (15g) UNSWEETENED SHREDDED COCONUT FLAKES (desiccated coconut)
HOW TO MAKE IT:
1. Whisk together the first 6 ingredients
2. Whisk together the next 4 wet ingredients then add the dried cranberries; to soak up some of the liquid
3. Pour the wet into the dry and fold to incorporate. Fold in sunflower seeds, pumpkin seeds, black sesame seeds and shredded coconuts until well combined
4. Lined your pot/pan/cookie sheets. Shaped your cookies into whatever size you like. I'm using a 1 tablespoon size for my cookies
5. Bake in the rice cooker for 1 bake cycle (30 min). There is no raw ingredients to cook through; just need to bind together
AIR-FRYER BAKING:
Bake in 375F (190C) for 5 minutes then turn the cookies over and bake another 4 minutes. Yours may need more or less time. Just keep an eye on it or it will burn quick
OVEN BAKING:
Bake in pre-heated oven of 325F (160C) for about 15-20 minutes. Ovens varied so check after 18 minutes and bake a little longer as needed

I LOVE Banana Breads! This recipe uses healthier flour and I'm keeping it egg-free and dairy-free for some of my viewers who cannot have those. But... if you don't have any restrictions, go ahead and substitute ingredients as desired.
Vegan Whole Wheat Banana Bread Recipe | No Egg | No Sugar | No Dairy | EASY RICE COOKER RECIPES
NOTES:
* 1 cup = 250 ml
* My rice cooker capacity = 1 litre or 5 cups

INGREDIENTS:
• 1 1/3 cup (325g) MASHED BANANAS (about 4-5 med)
• 1/3 cup (80ml) COCONUT OIL
• 1/2 cup (125ml) MAPLE SYRUP
• 1 tsp (6g) BAKING SODA
• 1 tsp (6g) VANILLA EXTRACT
• 1/2 tsp (3g) FINE SALT
• 1/2 tsp (1.5g) GROUND CINNAMON
• 1/4 cup (60ml) ALMOND MILK (unsweetened)
• 1 cup (140g) WHITE WHOLE WHEAT FLOUR (soft wheat)
• 3/4 cup (113g) WHOLE WHEAT FLOUR (stone grind)
• 1/2 cup (105g) CHOPPED PECANS (any nuts or dried fruits)
• 1 tbsp (15g) PURE CANE SUGAR
HOW TO MAKE IT:
1. Mashed enough bananas to get 1 1/3 cup
2. In large mixing bowl, whisk together the first 8 ingredients (before the flours) until well incorporated
3. Mix the flours together then add half to the batter and whisk. Add all the flour and whisk until combined
4. Add the chopped nuts (any nuts or dried fruits you like) and fold to incorporate
5. Lined or greased your pot/pan and evenly distribute the batter
6. Sprinkle the cane sugar on top then bake
7. Bake 2 bake cycles then check. Rice cooker varies so bake longer as needed
8. Cool 20-30 minutes and enjoy it warm

Bake in greased pan, in a pre-heated oven of 350F (180C) for 35-45 minutes. Ovens varied so check about 30 minutes and bake longer as needed
