Para producir la panela, el jugo de caña de azúcar es cocido a altas temperaturas hasta formar una melaza bastante densa, luego se pasa a unos moldes en forma de prisma donde se deja secar hasta que se solidifica cuaja.Este producto también es conocido como piloncillo en la costa de Málaga y Granada, lugar desde donde partió la caña de azúcar hacia Canarias y posteriormente hacia América.
