Building Winter Pen for our Icelandic Sheep
This past weekend we worked on another fencing project. Not bad for building in mid December! This time we were hoping to get a winter pen setup for our Icelandic sheep. Conditions were good and the tractor cooperated and we managed to get all the post holes dug and the posts set which means the project is one more thing we don't have to worry about next year!

Today we are making sugar beet syrup from our homegrown 2022 sugar beet harvest. This process is similar to making maple syrup, but with the added bonus of being able to use sugar beets that you can easily grow on your own property! Raising silkie chickens in winter is a topic that can be a bit controversial. But today, we are sharing our experiences so far with raising a small flock of silkie chickens in Canada. Though the winter of 2024 has been somewhat mild, we have still seen some pretty drastic temperature fluctuations and the silkies have been living through it all. So, if you are considering silkies but thinking maybe they are not as cold hardy in the winter as you would like, hopefully, this video gives you some things to think about and maybe helps answer some questions about raising silkies in the winter cold.

Selecting Meat Rabbits For Breeding Or At Least How We Do It
Well its time to make some decisions on our rabbits for the upcoming 2022 breeding season. And what better time to go over some of the factors we look at when selecting replacements for our breeding flock. Its important to select for qualities you want in your rabbits or any livestock.
Since one of the qualities we keep our rabbits for is meat, their physical characteristics in terms of loin width and size are important but as their fur is also a usable product it cis important to consider physical look as well as that does equate into ease of matching fur etc. So lets look at some of the qualities we look for in our Champagne D'argent rabbits when we are selecting the next generation of breeders.

Homestead Cooking Squash Recipe | Pickled Squash Another Way To Preserve Squash
squash pickles or pickled squash another way to preserve squash for later use. This recipe was made with our Canada crookneck squash but could easily be made with butternut squash or any variety which you can peel and cut into squash sticks! This was another new recipe for us but we think we can find some tasty uses for these squash pickles in the kitchen in the near future! Certainly an easy and worthwhile addition to your squash recipe collection.
Recipe from Ball Blue Book Guide to Preserving
4 lb Butternut/Canada Crookneck Squash
1 1/2 TBSP Pickling Salt
1 Cup Sugar
2 Cloves Garlic
2 tsp Fennel Seeds
1/4 tsp Black Peppercorns
2 1/2 cups white wine vinegar
1/2 cup water
thyme for each jar
Toss matchstick squash in salt, cover and let sit for 2 hours. Then rinse and drain
Bring sugar, garlic, fennel, peppercorns, white wine vinegar and water to a boil, then simmer covered for 10 minutes
Pack sterilized jars, cover with liquid leaving 1/2 inch headspace
water bath can for 10 minutes at a rolling boil

Today we are canning apple syrup a favorite in our house. We are fortunate to have an abundance of apples and in addition to juice the syrup we make from the apples is a welcome addition to the pantry. This is not only a simple recipe but a tasty way to preserve an abundance of apples for later use!

Planting Pepper Seedlings and Grow Room Tour March 2022
Spring is on its way and its time to get our pepper seedlings planted. Planting pepper seedlings is usually our first yearly seed starting task. We started the seeds ahead of time and now need to transplant them into pots. We also need to get our grow room in order so we have somewhere to get these started before conditions allow us to move them outside!
