Today I am sharing another great option for game day or any day snacking. These pigskin peppers are great to serve for the big game as a heavy appetizer or as a lunch option if you are so inclined. These are keto friendly, low carb and delicious! A quick and easy filling is stuffed into a sweet, mini pepper half, wrapped in bacon and baked in the oven. If you are doing a low carb diet you still want to enjoy the snacks and treats that come with celebrations, parties and game day spreads. These sweet pigskin peppers are going to fit that bill. These start with sweet mini peppers that are cut in half and cleaned of their seeds and membranes. Then they are stuffed with a delicious, creamy, cheesy filling that you can spice up any way you like. Then they are wrapped in bacon and baked until melty and delicious. These are quick and easy and can be made with things you probably have on hand.

I made the filling with one brick of softened cream cheese, one cup of sharp cheddar and one cup of monterey jack cheeses. Blended those up and added some heat in the form of minced, pickled jalapenos and some seasonings along with a few good dashes of chipotle tabasco sauce. The latter gives everything a nice acidity that is needed here to cut through the richness of the cheese.

Bake these up for around 25 minutes and enjoy!

These should be eaten the day they are made and do not save over very well. The filling can be made in advance and you can fill the peppers as you want to eat them if you are going to enjoy them as a lunch option.

You can even add cooked, crumbled bacon to the filling and stuff it into the raw peppers and enjoy them that way. Either way is delicious!
