This is part two of four videos on my deck cooking lamb skewers on my Jamaican Coal Pot.
Recipe for the skewers.
One lb of ground lamb
About a quarter of a cup of dehydrated onions
Good sprinkle of cumin
Good sprinkle of paprika (Hungarian)
Course ground black pepper
About six small chopped jalapenos (Seeds and all if you like spicy), Three if they are very large
A few ounces of fish sauce
A few dashes of Worcestershire sauce
Make a glaze of rum, fish sauce and honey at 1/3d each to bush them with when they are almost done.
