-Bagel for small 8 pieces
All purpose Flour 500 g
Active dry yeast 1/2 Tsp
Sugar (sweetener) 2 Tbsp
Warm water 270-280 ml
Salt 1/4 Tsp
==== Recipe =====
Warm water, sugar, yeast into bowl and let activate yeast for about 5 minutes.
Put flour, salt into a large bowl and pour yeast mixture.
Mix until all dough come together.Let the dough rest for 15 minutes with cover.
Divide the dough into 2 pieces if you are making 2 different flavor.
(I made Sesame & Cinnamon raisin.)
For Sesame Bagel, divide the dough into 4 pieces & make a shape.
For Cinnamon Raisin Bagel, add cinnamon & raisins.
Knead until well mix & divide the dough into 4 pieces.
Make bagel shape.
Let the dough rise about 20 minutes.
Prepare boiling water & add sugar, honey, molasses.
Cook each side for 30 seconds.
Drain the water.
Topping some sesame if you want (Optional)
Place the baking sheet.
Preheat oven for 210°C or 410°F.
Bake for 15-20 minutes.

Stretch the dough.
Let it rest for about 15 minutes.
Stretch the dough again & divide into 4 pieces.
Roll into flat & place the filling on middle of the dough & close it.
Pinch the end of dough.
Repeat the same process.
Place the dough seam side down on baking pan &let it rise until double in size.
After 30-40 minutes.
Preheat oven for 190°C or 375°F.
Bake for 15-20 minutes.
-Making filling
Place the potatoes in micro safe container & heat up 3-5 minutes until potatoes become soft.
Remove the potato skin (Optional)
Mash the potatowith masher until smooth.
Add seasoning for taste.
Let it cool & set aside for later.
