○Filling
cream cheese, 40 g
heavy whipping cream, 30 g
plain yogurt, 10 g
lemon juice, 1 tsp
sugar, 1/2 Tbsp
○Crust
graham cracker, 1 sheet
unsalted butter, 10 g
:Instruction:
●Making the Crust
1. Microwave the butter for 10 sec.
2. Crush the grahams into small pieces by hands at first.
3. Then crush them more finely by the bottom of a glass cup.
4. Stir the butter then microwave for addition 5 sec.
5. Pour the melted butter to combine with cracker pieces.
6. Add powdered sugar and maple syrup.
7. Mix them well.
8. Add the cracker pieces into a mold.
9. Press down tightly.
10. Build a wall.
11. Chill the crust in the fridge for 30 min.
●Preparing the Peach
1. Cut the fibers a round along the seed.
2. Grab the seed by a scissor, rotating and then pulling out.
3. Boil a small pot of water.
4. Put the peach into the boiling water.
5. Cook for 1 to 2 min or until the skin can be removed easily.
6. Removed the skin carefully.
●Making the Filling
1. In a mixing bowl, add cream cheese, sugar, yogurt and lemon juice.
2. Mix them well.
3. Whisk the heavy cream.
4. Add the whipped cream into the cream cheese mixture.
5. Mix them well.
●Making the Peach Tart
1. Take out the crust from the fridge.
2. Spread the cream cheese filling.
3. Fully fill the peach with the cream cheese filling.
4. Put the stuffed peach on the crust.
5. Freeze the tart for 15 min.
●Decorating
1. Pipe a small ball of the filling on the top.
2. Place a small green leaf.
3. Enjoy!

:Instruction:
●Making the French Toast Crust Churros
1. Coat the toast crust with eggs.
2. In a small bowl, put 1 Tbsp sugar.
3. Add 1/4 tsp ground cinnamon.
4. Mix them well.
5. Sprinkle the cinnamon sugar on the toast crust.
6. Flip over and sprinkle the cinnamon sugar as well.
7. Transfer to the air-fryer.
8. Place them evenly. Don't overlap each other.
9. Air-fry at 400℉/190℃ for 5 min.

●Cooking Red Beans
1. Clean red beans. Put red beans into Instant Pot. Add 540g water.
2. Choose Bean Program for 40 mins.
●Making Red Beans Paste
1. Filter the red bean water. Mash the red beans.
2. Put red beans onto a pan and add coconut sugar. On low heat, keep mashing red beans and mix them well.
3. Sift mashed red beans. Scrape down the fine red beans paste.
●Making Sweet Rice Dough
1. Stir water and sweet rice flour in the mixing bowl. Mix them into thick sweet rice batter.
2. Spread some oil on a glass container. Pour the batter into the glass container.
3. Add 1.5 cups of water into Tatung rice cooker. Put the batter into the cooker and turn it on.
4. After 20 mins, the sweet rice dough has cooked.
●Making Rolling Donkey
1. Spread some toasted soybean powder on the baking mat.
2. Put the sweet rice dough onto the soybean powder. Let the dough coat with the soybean powder thoroughly.
3. Use a rolling pin to flatten the dough into 3 mm thick. Add some soybean powder if the dough is too sticky.
4. Spread the red beans paste onto the flat dough.
5. Roll it up tightly.
6. Cut it into 3~4 cm per piece.
7. Serve it with more toasted soybean powder.
8. Drizzle with homemade brown sugar syrup.
9. Enjoy!
