燒肉起司豆腐磚，一支平底鍋就能做出新菜色！便當菜、野餐菜 Pork and Cheese Wrapped Frozen Tofu Bricks
大家都知道把凍豆腐放入火鍋吸飽湯汁後，一口咬下非常美味。不過天氣熱喝不下熱湯的時候，也可以把凍豆腐做成乾式料理哦！一樣讓凍豆腐發揮吸收湯汁的特性，用里肌肉片把豆腐跟起司包裹起來、下鍋煎香之後，吸收了融化起司與焦香肉汁，所有精華都被凍豆腐鎖在裡面，這個做法比丟進火鍋中還要涮嘴！

食材
○豆腐磚
里肌肉片 135 g
起司絲 4片
凍豆腐 100g
○醃料
日式醬油 1大匙
○灑料
白芝麻 半小匙

Frozen tofu can absorb soup and gravy well like a sponge, so it is often cooked with hot pot. Otherwise, I wrapped the frozen tofu with thinly sliced pork and sliced cheese and pan-fried to brown color. After absorbing gravy and melting cheese, the frozen tofu just tastes so juicy!

○Tofu Bricks
thin-sliced pork loin, 135 g
sliced cheese, 4 slices
frozen tofu, 100 g
○Marinade
tsuyu sauce, 1 Tbsp
○Topping
roasted white sesame, 1/2 tsp
：Instruction：
●Preparing
1. Add sliced pork and tsuyu sauce into a container. Gently mix them.
2. Take a frozen tofu and squeeze out the liquid carefully.
●Making the Tofu Bricks
1. Cut the sliced cheese into the same wide as frozen tofu.
2. Wrap the frozen tofu with the sliced cheese.
3. Take a slice of the pork. Wrap the cheese and tofu in another direction.
4. Wrap them thoroughly as possible as you can.
5. Sprinkle roasted white sesame.
●Frying the Tofu Bricks
1. Add a little oil to a frypan and over on medium heat.
2. Place the tofu bricks in order.
3. Flip them over in order.
4. Let them stand against the wall of pan to fry their sides.
5. Flip them over in order again.
6. Make sure every sides have well done. Remove from pan.
7. You can sprinkle some chopped green onions and enjoy!

楓糖岩燒乳酪醬！自製托斯卡尼麵包
焦色點點落在黃澄澄的麵包表面，光用看的彷彿就能聞到陣陣焦香味，實在很誘人！而且沒想到長相跟名稱都如此華麗，卻是個做法超級簡單的傢伙，也太棒了吧！岩燒乳酪醬最常見的吃法是單面塗抹在厚片土司上，烤到金黃焦香，但這個醬脂肪含量真的比較高，所以除了常見的厚片吐司，我還試著用無油無糖的歐式麵包來製作我的托斯卡尼麵包。

This cheese sauce is awesome to spread on any bread or toast! A little salty from cheddar cheese and a bit sweet from maple syrup, this combination turned out so good flavor you will never have. You only need 3 ingredients to make the sauce. Easily spread the sauce on toast and bake it for 5 to 7 min. in the morning…then you got a nice and hot breakfast!

1. In a saucepan, add heavy cream.
2. Add maple syrup.

4. Stir the mixture well.
5. Add half cheese slices.
6. Stir until fully melted and well combined.
7. Add the rest of cheese slices.
8. Stir the mixture well.
●Making the Lava Cheese Bread
9. Dip the sliced bread into the cheese sauce.
10. Let the bread completely coat the cheese sauce.
11. Dip the thick sliced toast into the cheese sauce.
12. Let the bread completely coat the cheese sauce.
13. Place the coated bread and toast on a small baking sheet.
14. Transfer to a countertop oven.
15. Broil at 400℉/ 200℃ for 7 min.
16. Spread the cheese sauce on the other bread and toast.
17. Place this batch into the air-fryer basket.
18. Air-Fry at 400℉/ 200℃ for 5 min.

台式麵包的造型從小看習慣了，不曾想過是怎麼做出來的，反而現在走上烘焙之路，回頭去看才發現這些造型都是別出心裁！田螺麵包就是一個很用心的造型，我一邊做一邊在想，不知道當初發明的人是抱著什麼心情研發的。這人真有才華，不只造型可愛，中間的洞塞入滿滿內餡，吃起來比例剛剛好，超美味！
：食譜：
食材▼
○麵團
高筋麵粉 200 g
水 75 g
雞蛋 1 顆
糖 20 g
無鹽奶油 20 g
酵母 2.5 g
鹽 1/8 小匙
○內餡
巧克力卡士達醬 200 g

I didn’t know where to get cornet bread except to make it myself, so I just made it. It feels so good to have it in the U.S. Making this cornet-shaped bread is so fun! I made the chocolate custard filling and horn-shaped mold ahead, so making the cornet bread in a day is much easier.

instant yeast, 2.5 g

●Making the Dough
1. Add water, egg, sugar, and instant yeast into a mixing bowl. Then, add flour and salt.
2. Mix all ingredients on low for about 3 min first.
3. Cover with a wet cloth and let the dough rest for 30 min.

4. Continue to knead on medium for about 5 min.
5. Add softened butter.
6. Mix the butter and dough on low for about 3 min.
7. Stop to knead and flip the dough over.
8. Continue to knead on medium for about 5 min.
9. Knead until you can stretch the dough thin like a windowpane without breaking.
10. Transfer the dough to an oiled mixing bowl.
11. Cover with a wet cloth and let the dough proof for about 1 hour.

12. The dough has doubled in size.
13. If you poke your finger into the dough and the indentation stays, the dough is done proofing.
14. Transfer the dough to a baking mat.
15. Slightly press down to deflate the dough.
19. Fold the dough and shape into a ball.
20. Cut into 6 pieces.
21. Shape them into balls.
22. Cover with a wet cloth and let the dough rest for 15 min.

23. Take a small dough and slightly press down to flatten it.
24. Roll it out. Then, flip it over and roll out again.
25. Roll it up from the upside into small log shape.
26. Repeat the same steps to finish 6 small logs.
27. Go back to the first small log. Roll the log back and forth to make a longer and thinner log.
28. Repeat the same steps to finish 6 small logs.
29. Go back to the first small log again and roll the log back and forth to make a longer and thinner log.
30. Twist the dough from the small end of the horn mold. Tuck both ends under the dough spiral to keep dough from unraveling.
31. Keep twisting the dough around the mold.
32. Repeat the same steps to finish 6 cornet shape doughs.
33. Place cornet doughs on the baking pan seam-side down.
34. Cover with a lid and let the dough proof for 30 min.

●Preheating the Oven at 400℉/ 200℃
35. Brush a layer of egg wash on the surface of the dough.
36. Transfer to the preheated oven.
37. Bake at 400 ℉/ 200 ℃ for 10 min.
◆10 min. later◆
38. Remove from the mold after cooling down for 5 min.
●Filling the Cornets
39. Stir the chilled chocolate custard filling to smooth.
40. Transfer the custard to a pastry bag.
41. Fill the cornet bread with the custard.

客家擂茶冰淇淋大福！自製麻糬皮
除了內餡是擂茶口味的冰淇淋，麻糬外皮也特地混了一點擂茶粉變成香味非常濃郁的擂茶雙重奏。沾了黃豆粉的擂茶麻糬皮外觀很漂亮，因為擂茶麻糬皮顏色比較深，沾上黃豆粉有點像灑了金箔，意外地有點高級感。Q彈的麻糬皮配上冰冰涼涼的冰淇淋，讓吃冰的心情更像是在享受一頓下午茶！

糯米粉 50 g
擂茶粉 20 g
水 100 g
砂糖 30 g
黃豆粉 15 g
○內餡
法國鮮奶油 130 g

Lei Cha is unique ingredient to make food taste better. However, I never saw in the U.S. I like how soft and chewy it is. There is some nuts aroma because except tea there are still some sesame and peanuts inside the sauce.

sweet rice flour, 50 g
Lei Cha powder, 20 g
water, 100 g
sugar, 30 g
roasted soybean powder, 15 g
○Filling
heavy cream, 130 g
powdered sugar, 15 g
Lei Cha powder, 15 g
water, 45 g
：Instruction：
●Making Ice Cream Filling
1. Mix 20 g Lei Cha powder and 100 g water.
2. Pour cold heavy cream in the chilled mixing bowl.
3. Beat the heavy cream with an electric mixer.
4. Add powdered sugar.
5. Stir with a hand mixer.
6. Beat with an electric mixer until well combined.
7. Add 3 tsp of Lei Cha at a time. Beat until well combined.
8. Add another 3 tsp of Lei Cha. Beat until well combined.
9. Add the rest of Lei Cha. Beat until well combined.
10. Put the chilled egg white into another mixing bowl.
11. Pour the mixture into a container.
12. Cover it with a lid and freeze for 3 hr. or overnight.
13. Scoop the Lei Cha ice cream.
14. Cover it and freeze for 2 to 3 hr.
●Making Mochi
15. In a mixing bowl, add sweet rice flour and Lei Cha powder.
16. Add sugar and Mix it well.
17. Stir consistently while adding water.
18. Mix until well combined.
19. Brush a thin layer of oil in a glass container.
20. Pour the mixture into the container.
21. Place the mixture into the Tatung cooker.
22. Cover with the lid and press the button down.
◆ 15 min. later ◆
23. Take the mochi out.
24. Let it cool down completely.
25. Dust the baking mat with roasted soybean powder.
26. Transfer the mochi to the baking mat.
27. Fully coat the mochi with roasted soybean powder.
28. Roll out the rounds to 3 mm thick.
29. Cut it into 8 cm round with a biscuit cutter.
30. Stack the mochi rounds with baking paper in between.
31. Put the mochi rounds into a container.
32. Cover it and Transfer to freezer until need.
●Assembling
33. Place a scoop of ice cream on a slice of mochi.
34. Wrap the ice cream tightly.
35. Place the daifuku on a baking paper seam side down.
36. Beat the mixture well with an electric mixer.
37. Cover it and freeze for 1 hr.
38. Enjoy!
