I love cooking with fresh things from my garden! Here's a tasty one -
Rhubarb Bars:
CRUST
1 cup quick oats
1 cup ground almonds/flour
2 T. sugar
8 T. butter
Bake at 350 for 15 minutes then 400 for another 5 minutes. Till turning golden brown.
FILLING
4 cups rhubarb/berries
1/2 cup water
1/4 cup lemon juice
1/3 c sugar
2 T. arrowroot powder
Simmer and then smooth over crust
CRUMBLE TOPPING
3 T. sugar
1/4 cup almond flour
1/4 cup quick oats
4 T. butter
1 T. cinnamon
Sprinkle on top and bake at 350 for 15 minutes. Enjoy!
