Wrapped Sourdough Bread
This is a bread experiment with bread wrapped in a cocoa dough layer made from discarded sourdough.
Ingredients for 2 loaves:
Main dough (73% hydration) :
- 250g sourdough starter at 100% hydration
- 750g organic wheat flour (T85), called demi-gris in French
- 75g rye flour
- 75g whole wheat flour (T110)
- 625g water
- 20g salt
Wrap dough (60% hydration):
- 300g discarded sourdough (100% hydration)
- 80g all purpose flour
- 20g cocoa powder

Turmeric Marbled Sourdough Bread
An open crumb sourdough bread with swirls of turmeric.
Ingredients: (1755g dough, 80% hydration)
- 175g sourdough starter (100% hydration)
- 700g strong wheat flour (14% proteins)
- 100g spelt flour
- 70g spelt flour
- 685g water
- 18g salt
- 7g turmeric

75% Hydration Sourdough Bread
If you plan to bake a high hydration dough, start with 75% hydration and with strong bread flour. This is my preferred hydration when I target an open crumb sourdough bread.
Ingredients:
- 175g sourdough starter (100% hydration)
- 716g strong wheat flour (14% proteins)
- 100g spelt flour
- 590g water
- 17g salt
