Here's my amazing Keto Berry Cheesecake Recipe for special occasions such as birthdays or Christmas. This keto berry cheesecake tastes delicious and it has no sugar added. It's a relatively easy recipe, however, be ready to wait, as the cheesecake has to be refrigerated for at least 8 hours.
If it still doesn't have the right consistency, you can keep it in the freezer for 2 extra hours.
Here's the recipe for this wonderful keto cheesecake:
INGREDIENTS:
For the crust:
1 1/2 Cups almond flour
1/4 Cup Powdered Sweetener (such as erythritol or monk fruit)
6 Tablespoons Butter
For the filling:
5 Packages 8 ounces (250g) full fat cream cheese, room temperature
3/4 Cup Powdered Sweetener (such as erythritol or monk fruit)
30 Drops of liquid stevia
3 Large Eggs room temperature
8 Ounces (250g) Sour Cream, room temperature
2 Teaspoons Vanilla extract
EQUIPMENT:
10-inch Springform Pan
Hand mixer
METHODS:
Pre-heat oven to 160Β°C/325F. Adjust the rack to the middle of the oven. Combine the crust dry ingredients in a medium bowl. Mix in the butter. Mix with a hand until well combined. Pour the crust mixture into a rubbed with butter 10 inch x 4 inch springform pan using your fingers and spread equally through the bottom until fully covered. Refrigerate the crust for 20 minutes.
In a large mixing bowl, beat the room temperature cream cheese with a hand mixer until light and fluffy. Add in the sweetener and beat with the hand mixer. Add in the vanilla and room temperature sour cream and beat until just incorporated. Finally, add in the room temperature eggs one at a time and beat until well mixed.
Pour the cheesecake mixture into the crust and even out the top. Bake in the preheated oven. Check after 50 minutes. The top should no longer be glossy and the centre should still be jiggly. Turn off the oven and leave it open. Let the cheesecake sit in the oven for 20-30 minutes. Do not remove the springform. Let sit on the counter for 1 hour. Refrigerate for at least 8 hours. If still not good consistency, freeze for 2 hours. Remove the springform pan sides, decorate the top, and serve. Makes 12 slices.
