Homestead Mangalitsa pigs can be stored almost entirely out of the freezer with salt curing. Making lardo is a really easy way to cure thick pieces of fat to render them shelf stable. It's not a pork product homestead chefs are very familiar with, but a few suggestions and a little practice will get you on your way.
