His recipe for Malted Pumpkin Cookies is listed below. KEN JOHNSON’S MALTED PUMPKIN COOKIES: 2 ½ Cups Self-Rising Flour ½ Cup Softened Salted Butter 1 ½ Cups Light Brown Sugar 1 Cup Sieved Pumpkin Puree (from Ken’s Country-Style Pumpkin Beer’s Wort) 1 Farm Fresh Egg 1 Tsp. Vanilla Extract Preheat the oven to 370°F. Cream the butter and sugar together with an electric mixer. Add in the puree, egg, and extract. Slowly, incorporate the flour. Line a large sheet tray with parchment paper. Dollop out ½ tablespoon balls about 3 to 4 inches from each other on the sheet tray. Bake for 15 minutes. Retrieve from the oven and let sit 5 to 7 minutes to firm up a bit before using a spatula to remove the cookies from the parchment paper and place them on a cooling rack to fully cool.
