What's the big deal with those grill marks anyway? Those blackened marks on your steak happen because of something called the "Maillard reaction", a chemical reaction that occurs between amino acids and carbohydrates when food is exposed to extreme heat. The Maillard reaction is responsible for the browned, complex flavors that make bread taste toasty and malty, steaks taste savory and charred, and coffee taste dark and robust.
