With leftover meat from burritos and left over rice, I created delicious bite sized stuffed mini peppers. Mix it up, you could also add cottage cheese to mixture or just stuff with rice and cooked veges like onions, mushrooms, peppers or even tiny pieces of broccoli. Play with the cheese to (I had cheddar but mozzarella, Jack, Colby, Romano or even Parmesan would change the flavor completely. Use your leftovers. #Diabeticfriendly #vanlife Created by VideoShow:http://videoshowapp.com/free ... https://www.youtube.com/watch?v=oaBmbD1YKak
Hi everyone,
I apologize for these taking so long but many reasons (excuses really). I will have these come more often. I would appreciate feed back if you like this style of video for simple foods? I will do videos showing more when I do videos for specialty items (like the bison steak one) that everyone will need to see easy techniques for best outcomes, examples like: cooking chicken/turkey on BBQ, Ribs, rubs, marinades or anything that it makes a difference for how you do it.
Also note: I rarely prepare everyday items (rice, potatoes, pasta, salads, soups or stews) the same way twice. Whether it be needing to enlarge recipe for more people, missing an item (plan to do an informative video on substitutions), change flavors to compliment the other menu items or just simply to change it up a little so it doesn't get boring. I will give a couple sub possibilities in each video and later blow your mind by completely changing it up in another video.
Pretty much everything I cook has to be healthy (diabetic friendly - low fat, low sugar, low salt). But there will be some controversial items (for example white rice or pasta) that experts disagree on and our own experiments with how these affect sugar levels multiple times. I am not an expert, final direction should come from your medical advisor who knows you and can access your current lab results because these affect their advice. If there are issues that contradict what you have been advised by your doctor, always follow your doctors advice but I am happy to explain my reasons if you are curious. Also everything has to be quick and easy prep where I do not have to sit for extended periods of time, because my back won't tolerate that. Also everything can be prepared in your house, RV or in your van by stove or BBQ (it's crazy but many items traditionally prepared in an oven can be baked or roasted in a BBQ).
Are you salivating yet?? ;-)

This lifestyle requires increased assessment of consumables for safety, effectiveness and even toxicity.
Topics we will cover include,
What are consumables?
How often to access?
Reasons why assessment is important.
How do manufacturers set expiry dates?
Why items in a vehicle or RV can be impacted more readily then in a house.
Temperature
Freezer -15° C- 0°C
Fridge 2°C - 8°C
Cool 8°C - 15°C
Room/ambient 15°C- 21°C
Humidity 65% max
Light - dark best
Salinity - Ocean air or road salting
All are very difficult to control all the time, if ever in a vehicle
6.Consequences of deteriorated products
Colour, fading or changing (yellow or brown), decrease nutrients vitamins (C, E, K and B9 (folate) ) especially affected
Odour (unusual for item or stronger then normal)
stability or consistency, separation of products, items usually smooth with sand like substance, caked product, Chipped tabs, sticky coatings, gel caps sweating or fused together, freezer burn, mold, sour chunky milk, bubbles in sealed product, gas formation causing bloated packages, taste is off (sour, rancid, bitter etc), texture not normal for product.
7. What to do with medical waste?
By law every pharmacy in Canada must take expired or meds and medical items like sharps, test strips etc, while open.

Super excited to share some exciting news with you all.
When we started our journey we definitely didn't have "everything we needed", we were "unsure" of needs and wants in our home. But our point of view is that it is far more important to get out there, and start our journey.
So many things in life have tried to hold us back and we aren't going to allow anything to prevent us from living and experiencing life. No matter what obstacle we face we know we will find our way and time to overcome it. I am so glad we have taken our time to find out our "true needs" and to not just listen to what others have chosen. There are way too many factors making each of our situations different and requiring a different solution. Yes, some of it seems simple to most, but reality is different.
We wanted to be sure
what we wanted and truly needed.
Think about the pros and cons of all the options,
Ensure it is sustainable
A quality product,
Product and company has great track record (proven),
Will meet our requirements for a long time (quality built, enduring materials - Stainless Steel with this one)
Not ruin our home to install,
Require too much renovation
Take too long to do
Require a professional to install, maintain or repair (all of which requires money)
Not create other problems that could be costly (like moisture - mold, rust, mildew etc)
Fuel would be accessible everywhere we go,
Has to match our personalities (both of us are survivor minded and just in case can we use this without:
Needing money for fuel
Needing a gas station (in disasters, fuel becomes scarce, pumps don't work with electricity, stores have no product etc)
Doesn't require constant work or consideration
(don't have to worry about solar panels or if they are getting sun,
don't want to worry about propane freezing and how to thaw it
don't want to have to carry large amounts of fuel - taking precious space or have to spend much time getting etc)
This uses very small amounts of fuel
Can it potentially help with any other needs? (How about cooking, heating water etc)
It took a long time, but we decided several months ago and have been purchasing pieces one at a time as able.
As we have had so many things fall apart, we didn't dare breathe our plan until we had it all and ensured it worked well.
We finished installing yesterday!

Nk'Mip Creek fire more than doubles in size
The Nk'Mip Creek fire continues to burn on Osoyoos Indian Band land between the towns of Oliver and Osoyoos, about 40 kilometres south of Penticton. The B.C. Wildfire Service had previously referred to the fire as the Inkaneep Creek wildfire, but changed the name on Tuesday.

Safe driving, wildlife on the road. VanLife, Rvlife
Driving from September to January can be very dangerous. Rutting season means males want to mate, are fighting each other (sometimes on death matches) and females are fleeing all that aggressiveness and testosterone. Knowing this is the seasoning and knowing hunting season times can help you pay more attention to the presence of animals on or near the roads.
Try to not drive during the most active times (dawn and dusk to late evening)
If you see one animal there are most likely around, below down and be hyper aware.
Heed the caution signs on roads (they are there because animals have died usually from collisions in that stretch of hwy) therefore this is warning that this is a normal area, they are present.
Do not try to swerve to avoid hitting, this can cause a head on collision with another vehicle or cause your vehicle off road. Brake hard and slow as quickly as safe.
Do not approach an animal that is injured, It is scared and can attack (they mist likely outweigh you and can easily kill you.
If dead try to move off road or call for help.

Deep Cove is a small local, waterfront-oriented village centre, at the eastern edge of the District.
Bounded by the Seymour community to the west, the waters of Burrard Inlet and Indian Arm, and the wilderness forests of the North Shore mountains, Deep Cove is one of the most scenic spots in the lower mainland. Home to world-class recreation opportunities, locals and visitors alike seek out Deep Cove to hike the trails, shop in the village, and paddle or sail up Indian Arm.
A favourite shooting location for TV and film productions, and home to galleries, concerts in the park, and its own small stage theatre, the Deep Cove area includes the Cove Cliff, Dollarton, and Indian Arm neighbourhoods, as well as Deep Cove village.
