Preparation of homemade aioli 1) Ingredients - 3 garlic cloves - 1 egg yolk  - 1 dash of lemon juice - 20cl olive oil -Salt -Pepper - Espelette pepper  2) Preparation Peel and degerm the garlic cloves. Pound ointment in a mortar. You can also press them with a garlic press.  3) In a bowl, place the garlic puree, add an egg yolk season and mix.  4) Pour the oil and whisk vigorously as you go. The sauce should take easily. Chef's tip: If the sauce does not set, in another bowl whisk another egg yolk and add to the preparation. 5) When the aioli is mounted, add a dash of lemon juice and season to taste.  Enjoy your meal!  ‐------------------------------------------------------------------------ In French Préparation de l’Aïoli maison 1) Ingrédients - 3 gousses d’ail - 1 jaune d’œuf  - 1 trait de jus de citron - 20cl d’huile d’olive - Sel - Poivre - Piment d’Espelette  2) Préparation Pelez et dégermez les gousses d’ail. Pilez en pommade dans un mortier. Vous pouvez tout aussi les presser avec un presse ail.  3) Dans un saladier, déposez la purée d’ail, rajoutez un jaune d’œuf assaisonnez puis mélangez.  4) Versez l’huile et fouettez vivement au fur et à mesure.
