鐵觀音生乳酪本來就是在菜單上會特別亮眼的存在,這次把餅乾底做成厚厚的塔皮,是不是又更誘人了?生乳酪一直都是我很喜歡的甜點,比起重乳酪,生乳酪更清爽做起來也更輕鬆,可以變化的口味百百種。配上濃茶香時,整體風味優雅又平衡,喜歡茶香的朋友一定要試試看。
:食譜:
食材▼
○乳酪糊
奶油乳酪 225 g
鮮奶油 120 g
希臘優格 140 g
糖粉 50 g
鐵觀音茶粉 10 g
○餅乾底
全麥餅乾 150 g
無鹽奶油 70 g
鹽 1/8 小匙

Iron Goddess Tea is a kind of oolong tea from Taiwan. It is one of my favorite flavors of desserts. I also made an extra thick crust for this no-bake cheesecake to make it become a tart. Yes, you don’t need an oven to finish this dessert. You just put it into the fridge and let it do the rest.
:Recipe:
Ingredients▼
○Batter
cream cheese, 225 g
heavy cream, 120 g
Greek yogurt, 140 g
powdered sugar, 50 g
iron goddess tea powder, 10 g
○Crust
graham, 150 g
unsalted butter, 70 g
salt, 1/8 tsp
:Instruction:
●Making The Tea Cream 1. Pour heavy cream into a saucepan over low heat.
2. Add iron goddess tea powder. Mix it well.
3. Add powdered sugar. Mix it well.
4. Cook until slightly boiled.
5. Transfer to the fridge while it cools down.
●Making the Crust
6. Melt butter over low heat.
7. Place graham crackers into a food processor.
8. Finely blend it into graham cracker crumbs.
9. Add melted butter.
10. Mix them well.
11. Add salt. Mix it well.
12. Brush a thin layer on the baking mold. Line baking paper.
13. Add 1/3 graham cracker crumbs at a time.
14. Press the crumbs on the wall with glass.
15. Add more 1/3 graham cracker crumbs.
16. Continue to press the crumbs to create a thicker crust.
17. Add the rest of the crumbs.
18. Press down the crumbs to make the bottom of the crust.
19. Transfer to the fridge.
●Making the Filling
20. Add softened cream cheese into a mixing bowl.
21. Beat until smooth.
22. Add Greek yogurt. Mix them well.
23. Add iron goddess cream. Mix them well.
24. Scrape down the mixture on the wall. Continue to mix them well.
25. Remove the chilled crust from the fridge.
26. Add the filling.
27. Slightly flatten the filling.
28. Transfer to the fridge for 4 hours or overnight.
●The Next Day
29. Remove the cheesecake from the baking mold.
30. Transfer the cheesecake to a cake stand.
31. Sprinkle some iron goddess tea powder.
32. Enjoy!

This recipe is super easy! Only 3 ingredients and you will make simple, authentic and very chewy Japanese style rice cake (mochi)! It is awesome to grill the rice cake topping on adzuki beans soup or simply drizzle with sweetened condensed milk and sprinkle with roasted soybean flour.

sweet rice flour, 120 g
water, 90 g
cooking oil, 1 tsp
:Instruction:
●Making Preparations
1. In a saucepan, heat some water.
2. Brush a thin layer of oil inside a container.
●Making the Dough
1. In a mixing bowl, add sweet rice flour.
2. Add oil and stir in water.
3. Stir until the mixture becomes lumpy.
4. Take a small rice dough and place the small dough into the boiling water.
5. Cook until floating to the top. Turn off the heat.
6. Place the cooked dough back to the mixing bowl. Mix all the mixture well.
7. Knead into a dough with smooth surface.
8. Place the dough into the oiled container. Press down the dough to fit the container evenly.
9. Pour 1 cup of water into the Tatung steamer. Place the container into the steamer.
10. Cover the steamer with its lid and the turn it on.
◆ 15 min later ◆
1. Take out the rice cake and let it cool down completely.
2. Brush a thin layer of oil on the surface of the rice cake.
3. Cover and transfer it to a refrigerator.
4. Chill the rice cake for 1 to 3 days to become solid.
◆ 3 days later ◆
1. Remove the rice cake from the container.
2. Cut the rice cake into your favorite size.
3. Freeze them and they can be stored for 3 months.

Let this super easy homemade ice cream accompany your summer time! I never know we can make ice cream at home without an ice cream maker until I met the recipe and tried to make it by myself. It opened a whole new world to me and I really want to share this lovely thing to you guys. Peanut butter is so perfect to add into ice cream, it creates creamy texture and tastes so good. But now, I can’t stop thinking what flavor of ice cream to make in the next time.
:Recipe:
Ingredients▼
heavy cream, 240 g
sweetened condensed milk, 120 g
peanut butter, 100 g
milk, 50 g
salt, 1/8 tsp
:Instruction:
1. Place the mixing bowl and the mixer in the freezer ahead.
2. Add heavy cream into the mixing bowl.
3. Gradually increase the speed of an electric mixer.
4. Whip the cream in high speed until soft peak formed.
5. Add sweetened condensed milk.
6. Mix the mixture well.
7. Add peanut butter and salt.
8. Mix the mixture well.
9. Add 1/3 milk. Mix until well combined.
10. Add another 1/3 milk. Mix until well combined.
11. Add the rest of milk. Mix until well combined.
12. Scrape down the side of the mixing bowl.
13. Beat in low speed to create smooth texture.
14. Lastly, stir with a mixer for a while.
15. Pour the ice cream base in a container.
◆ The Next Morning ◆
16. Let the ice cream soften at room temp. for 15 min.
17. Scoop as many as you want!
18. Serve in a beautiful glass bowl.
19. Top with your favorite toppings.
20. Enjoy!
