Jamaican Jerk Chicken, as the name states, originates from Jamaica. It is spiced with a mix of various spices and herbs, the highlight being the pimento seeds and scotch bonnet peppers (I have replaced with bird's eye chillies). Pimento seeds enhance the chicken's taste and bring it to the next level. I was inspired to make this dish from my trip to Canada. This chicken dish is found in most food courts and takeaways in Canada, and its unique flavor quickly won my heart. It does require a lot of ingredients for the seasoning, but if the seasoning is prepared ahead, you only need to marinate and grill or bake the chicken which really is a quick process. This is one of my best oven baked jerk chicken recipe and it is hit among my family and friends.

Jerk Chicken Seasoning Ingredients:
- 2 tbsp Pimento seeds
- 5 Whole Cloves
- 4 tsp Dry Thyme
- 3 tsp Black Pepper Powder

- 1 tsp Nutmeg Powder
- 5 tsp Brown Sugar
- 6 tbsp Lime Juice
- 1/2 cup Orange Juice
- 7 tbsp Dark Soya Sauce

- 1/3 cup Oil
- 2 tbsp Ginger Garlic Paste
- 4 stalks Scallions or Spring Onions
