苦甜巧克力 150 g
無鹽奶油 170 g
植物油 20 g
椰糖 150 g
黑糖 50 g
白糖 50 g (可自由替換成喜歡的糖)
中筋麵粉 80 g
可可粉 60 g

即溶咖啡粉 2 tsp
粗鹽 1 tsp

I-MEI’s CRUNCHOCO is a classic snack for Taiwanese. It’s a chocolate based crunchy crispy snack that every time you open a pack you can’t stop eating until it has all gone. I just thought it will be a perfect match for American’s classic snack- BROWNIE. I also made another 2 flavors, salt and pecan. All of them are so good! They have perfect fudge texture and you can eat melted chocolate every bites!
Ingredient
○Brownie Batter
chocolate chips, 150 g
unsalted butter, 170 g
vegetable oil, 20 g
coconut sugar, 150 g
brown sugar, 50 g
white sugar, 50 g (any kinds of sugar is fine)
all purpose flour, 80 g
cocoa powder, 60 g
eggs, 4
instant coffee, 2 tsp
kosher salt, 1 tsp
○Toppings
I-MEI CRUNCHOCO, 1pack ( 35 g )
kosher salt, 1/4 tsp
pecan pieces, 2 Tbsp
:Recipe:
●Making Batter
1. Melt butter in a saucepan over low heat.
2. Pour the melted butter into a large mixing bowl. Add the vegetable oil. Add sugar. (some brown sugar is recommended)
3. Mix them well.
4. Add 1 egg at a time and beat the egg well.
5. After add all 4 eggs, keep beating the batter for 5 to 10 min.
6. Sift all purpose flour and cocoa powder.
7. Add instant coffee and kosher salt.
8. Use a spatula gently fold until just combined.
9. Add chocolate chips and fold them into the batter.
●Preparing for Baking
1. Grease the baking pan with butter. Line with baking paper and Also grease the baking paper.
2. Pour batter about 2.5 cm thick into the baking pan. The batter can make two 15 x 15 cm brownies.
3. Slightly crush the CRUNCHOCO. Sprinkle the CRUNCHOCO pieces on one baking pan.
●Baking
1. Preheat the oven to 375 ℉ ( 190 ℃ ) and send two baking pan into the oven.
2. 12 min later, take out the plain one.
3. Sprinkle some kosher salt on the top.
4. Send it back to oven for about 10 more min.
5. 10 min later... Take the baking pans out of the oven.
6. If testing with a chopstick, it should come out dirty.
7. Brownies will continue set out of the oven so let the brownies sit for 15 min.
8. After 15 min, remove them out of the baking pan.

這道蓮藕雞肉餅出現在昨日的美食漫畫第15集,最初認真地照著漫畫中的食譜做了幾次,非常好吃。但因為我自己有習慣的做法,每次都忘記他有加什麼、沒加什麼,一直翻找實在很麻煩,最後乾脆都照著自己的配方走!因此我這份食譜並非完整復刻,大約只有87%像,口味上沒那麼甜、更符合台灣人喜好,蓮藕跟肉餅的結合度也更好一點,一定要試試看!
:食譜:
食材
○肉漿 (6片)
雞絞肉 300g
蓮藕 300g
雞蛋 1顆
地瓜粉 1大匙
鹽 0.5小匙
○紅燒醬汁
日式醬油 2大匙
味霖 1小匙
米酒 2大匙

○Chicken Mixture ( 6 patties )
ground chicken, 300g
lotus root, 300g
egg, 1
tapioca flour, 1Tbsp
salt, 1/2tsp
○Seasoning
tsuyu sauce, 2 Tbsp
mirin, 1tsp
michiu (rice cooking wine) , 2 Tbsp
●Making Mixture
1. Clean and Peel the lotus root. Cut 6 slices of lotus root thinly.
2. Cut the rest into small pieces. Put small pieces into blender and blend them finely.
3. Add half of the ground chicken. Blend it on a low speed at first, and then high.
4. Take out half of the mixture. Add 1 egg, tapioca flour, salt and the rest of the ground chicken. Scrape down the sides of the bowl.
5. Blend it on a low speed at first, and then turning up on a high speed.
6. Take out half of mixture. Put into the half mixture we took out previously. Put into all the mixture. Blend it well in the same way.
●Making Patties
1. Add oil on a frying pan. Heat the pan on medium heat.
2. Put 1/6 of the mixture on the pan. Put a slice of lotus root onto the mixture.
3. Press the lotus slice down and shape it into a patty. Repeat the steps until finishing 6 patties.
4. When the edge of the patty became golden, flip it over. Press patties slightly.
5. Flip them over again. Add 1Tbsp tsuyu, 2Tbsp michiu and 1tsp mirin.
6. Flip them over again. Add 1Tbsp tsuyu.
7. Flip them over again. Sprinkle some sesame.

This adorable Japanese dessert is my favorite strawberry dessert! Daifuku is a kind of mochi. The filling is a strawberry wrapped in sweetened red bean paste, tasting juicy and sweet. And its mochi skin has a pleasant soft and chewy texture which always makes me feel happy.
:Recipe:
Ingredients▼
○Mochi
sweet rice flour, 100 g
powdered sugar, 20 g
milk, 120 g
corn starch, 4 Tbsp
○Filling
strawberries, 8 ct
sweetened red bean, 240 g
salt, 1/8 tsp
:Instruction:
●Making Cooked Flour
1. Spread corn starch on a baking pan. Transfer to an oven.
2. Bake at 200℉/ 95℃ for 30 min.
●Making the Mochi
3. In a mixing bowl, add sweet rice flour and powdered sugar. Mix them well.
4. Pour milk and stir the mixture. Stir and mix well.
5. Mix them until well combined.
6. Brush a thin layer of oil on a glass container.
7. Pour the sweet rice batter into the container.
8. Add 1.5 cup of water into a Tatung rice cooker.
9. Transfer the batter to the Tatung cooker. Cover the lid and start to cook.
●Preparing the Filling
10. Add sweetened red bean on the flat pan. Spread the sweetened red bean evenly.
11. Add some salt. Cook the sweetened red bean over a medium-low heat until dry and fluffy.
12. Remove from the heat and cool down completely.
13. Pick 8 strawberries in the same size.
14. Rinse the strawberry and remove the green stem.
15. Pat dry the strawberries with paper towels gently.
16. Devide the red bean paste into 8 portions.
17. Take a portion of red bean paste and shape into a bowl.
18. Place a strawberry pointy end down. Wrap the strawberry in the red bean paste.
19. It's OK to uncover the tip of strawberry. You will wrap it more well in the next one.
20. You can make another style of strawberry daifuku.
21. Roll the red bean paste into balls without strawberry.
●Making the Wrap
22. Take out the cooked mochi.
23. Slightly knead the mochi with a silicone spatula.
24. Take out the cooked corn starch.
25. Thoroughly coat the mochi with cooked corn starch. Place the mochi on a baking mat.
26. Devide the mochi into 8 portions.
27. Take a portion, flattening and shaping it into a circle.
28. Roll out to make the circle thinner like a disc.
29. Remember to coat with cooked corn starch at all time.
30. It should be thick in the middle and thin on the edge.
31. Continue to finish the rest.
●Making the Daifuku
32. Place a strawberry and red bean ball on the mochi with
the tip facing down.
33. Wrap the red bean ball in the mochi tightly.
34. Just flip it over and it's finished.
35. You will wrap it more well in the next one.
●Making Another Style
36. Cut the top of the red bean daifuku without strawberry.
37. Place a strawberry into the seam.

自己包的湯圓總是特別大顆,吃起來好過癮!自製湯圓外皮超軟Q的,吃起來有溫度、有手感,有點難形容,但就是比較家常的感覺啦!我喜歡用大大的湯匙裝著湯圓,再前端輕輕咬一小口,然後看內餡緩緩流出,等流到湯圓皮都泡在裡面了就可以拿起來一口吃掉!

water, 75 g
○Filling
black sesame paste, 50 g
salted butter, 45 g
powdered sugar, 30 g
:Instruction:
●Making the Filling
1. In a mixing bowl, add sesame paste and softened butter.
2. Cut the butter into smaller pieces while stir and mix.
3. If it's hard to mix, put a pot of hot water below the bowl.
4. Stir and mix until fully combined.
5. Remove the hot water.
6. Add powdered sugar.
7. Mix them well until fully combine.
8. Cover it and freeze for 30 min.
◆ 30 min. later ◆
9. My filling is too soft, it's better to be solider.
10. Spoon and shape into small filling balls.
11. Divide to total 12 filling balls.
12. Freeze the filling balls for 1 hour.
●Making the Dough
13. Boil a small pot of water.
14. Place sweet rice flour in a mixing bowl and stir in water.
15. Stir until the mixture becomes lumpy.
16. Take a small piece of rice dough.
17. Slightly pinch and flatten the small dough.
18. Place the small dough into the boiling water.
19. Cook until floating to the top.
20. Place the cooked dough back to the mixing bowl.
21. Slightly mix the cooked dough and other dough firstly.
22. Transfer to a bigger mixing bowl.
23. Knead the dough until incorporated.
24. If the dough is too sticky, add some sweet rice flour.
25. Knead the dough until the surface soft and not sticky.
26. Place the dough on a baking mat.
27. Roll the dough into a log shape.
28. Cut and divide to 12 pieces and shape into small balls.
29. Cover with a wet cloth.
30. The frozen filling should be very solid.
●Making the Sweet Rice Ball
31. Take a dough and shape it into a bowl with thick bottom and thin edge.
32. Place a filling ball in the center.
33. Rotate and gather the sides of the dough to close the filling.
34. Pinch the seams shut and gently roll into a smooth ball.
●Cooking the Sweet Rice Ball
35. When the water boiling, add sweet rice balls.
36. Slightly stir the sweet rice balls to avoid them stick on the bottom.
37. Cook until they floating to the top.
38. Turn to a low heat and cook 5 more min.
39. Enjoy!

Crepe
低筋麵粉 20 g
cake flour, 20 g
乳清蛋白粉 25 g
whey protein, 25 g
雞蛋 1 顆
egg, 1
牛奶 90 g
milk, 90 g
砂糖 10 g
sugar, 10 g
有鹽奶油 10 g
salted butter, 10 g

步驟 Instructions▼

■Sweet Custard Thick Toast
1. In a mixing bowl, add whey protein powder and sugar.
2. Add softened butter cubes.
3. Combine the mixture with a butter spreader and fork.
4. Divide the custard spread into 4 portions.
5. Evenly spread a whole portion of the spread on a thick toast.
6. Score a crosshatch pattern with a butter spreader.
7. You can store the topped toast in a sandwich bag and transfer it to a freezer.
8. You don’t need to thaw. When you want to eat, directly bake the frozen toast until the surface is golden brown.
9. Transfer to an oven.
10. Bake at 450℉/220℃ for 5 to 7 min.
11. Turn the baking sheet on the halfway.
12. Enjoy!

■French Toast
13. In a mixing bowl, crack an egg. Whisk it well.
14. Add whey protein powder. Mix it well.
15. Add ground cinnamon. Mix it well.
16. Add milk. Mix it well.
17. Prepare a wide plate, adding half batter first.
18. Place 2 slices of toast on the batter.
19. Pour all the batter on the toast.
20. Flip them over to absorb the batter thoroughly.
21. Place the saturated toast on the preheated pan.
22. Cook the toast until you can move it easily with a spatula.
23. Flip it over.
24. Cover with a lid and cook for 2 min. on low heat.
25. Remove the French toast from the pan while golden brown on each side.
26. Place salted butter on the top of the French toast.
27. Place some fruits on the side.
28. Sprinkle powdered sugar on the top.
29. Enjoy!

■Crepes
30. In a mixing bowl, crack an egg. Whisk it well.
31. Add sugar and whey protein powder. Mix it well.
32. Add milk. Mix it well.
33. Add cake flour. Mix it well.
34. Cover with a lid and transfer to a fridge for 30 min.
35. Heat a pan and add the butter to the pan.
36. Rotate the pan and thoroughly coat it with melted butter.
37. Remove the batter from the fridge.
38. slightly stir the batter.
39. Pour the melted butter into the batter. Mix it well.
40. Wipe off the excess butter in the pan.
41. Pour one scoop of batter into the pan.
42. Rotate the pan to spread out the batter evenly.
43. Cook until the edge is slightly lifted.
44. Flip over the crepe with a spatula and chopsticks.
45. Cook this side for 20 sec, then remove it from the pan.
46. Spread the whipped cream on the crepe.
47. Sprinkle lime sugar and squeeze the lime juice.
48. Fold the crepe.
