Olan is very famous and traditional side dish of onam sadhya in Kerala. It is very easy to prepare and healthy too. The olan is completely vegan and gluten free. This is simple and serve in every onam sadhya. This dish is flavoured by coconut milk and it has creamy texture.
No need of ingredients like spices and tempering for this recipe. The olan is made with ash gourd, black eyed peas and coconut milk. You can cook the black eyed peas in pressure cooker or directly how i cooked. One whistle is sufficient for black eyed peas because it need not be so much mushy. The ash gourd will cook quickly so peas must be cooked beforehand. When you add ash gourd, add enough salt and fresh curry leaves. Green chili makes the dish a little spicy. Adding Coconut oil is a good combination to olan.
Ash gourds are called white pumpkins. Instead of ash gourd we can make olan in yellow pumpkin. I have used black eyed peas you can substitute with white cow peas or similar features of peas. Here I have homemade coconut milk, you can use store bought one but don’t use cow's milk.
The olan recipe is packed with nutrition. Olan is served with matta rice or kerala rice. It tastes yummy. After preparing the olan, cover it and let it cool down. Hence, veggie beans completely absorb coconut milk and start to become too creamy. The olan is to serve that day itself. It will not be good for the next day because we are adding coconut milk.

Kara kaddi is one of the easy snacks. It is a very popular snack in the south. In our local language this snack is called kara kaddi. Kara means spicy and kaddi means stick. This snack resembles a stick with a little spice so we call it kara kaddi. Along with being spicy it is crispy and tasty too.
Kara kaddi snack is very famous in Mangalore. Even in almost all bakeries we will get this kara kaddi. Even though mangalorean will prepare this snack at home too. You can prepare thick or thin kara kaddi, it's completely our choice. You can add more spices too for this kara kaddi recipe.
This recipe is very easy and don't need much ingredients. Besan is main ingredients for this recipe. Along with besan we are adding red chilli powder for spiciness. I used crushed ajwain for more flavour because it will give more delight while you are biting the kara kaddi. Hing and turmeric which gives a little more flavour to the recipe. Adding hot oil for forming a dough makes it crispy and soft.
For making kara kaddi we need a chakli press or snack presser. Snack pressers have different plates to insert. We need a medium size hole plate to presser. Add some dough and press to hot oil. We are directly pressing hot oil so be a little careful about hands. Once the snack turns to golden colour, take out the absorbing paper and leave for a few minutes. And make it like a stick.
This kara kaddi snack will remain at room temperature for almost twenty days. Once it cools down, store in an airtight container. So you can enjoy any time of the day or while you are having a cup of tea or coffee. Kids will love this recipe. You can serve this snack for their snack box.

Kadala curry is one of the very famous side dish in kerala region. Everyone knows how to prepare this curry in the region and everyone loves this curry so much. This kadala curry is very delicious and made with black chickpea. Kadala curry is a very old traditional recipe. In Malayalam it’s called Kadala Kari, Kadala means Black chickpea and Kari means curry.
I love this kadala curry especially with white rice. Of course it is very well combination with puttu and idli or appam.
This curry needs little spices and little time to make because we need to soak the chickpea before using. Soaked chickpea in hand then this is very easy and quick recipe.
For preparing the curry iam using fresh coconut, this is one of the highlight ingredients for the Curry. Roasting of spices and using spice powder gives more taste to this curry. While cooking the Black channa it must be soaked very well, otherwise it will take more time to cook. This curry is made with fresh coconut, coconut oil and blended with spices so this gives a unique taste from other curry.
You can prepare kadala curry in many variety. Some people are likes thick curry and someone likes watery consistent. While I am serving with a puttu I make little water consistency because puttu is one of the dry variants. When I serve it along with rice or dosa I will make a little thick consistency.
Chickpea is very good source of protein and nutrition. This is one of the wonderful option for using black chickpea. This curry is absolutely vegan and gluten free so anyone can have it and share with everybody.

My childhood was in rural areas so I am familiar with this recipe. In summer, tender coconut falls because of the hot or heavyweight of coconut. Tender coconut flesh is eaten directly as it is and it will be tasty too. But if the flesh is hard we cannot eat much directly and not enough to use for cooking. Necessity is the mother of invention, based on that idea this recipe is been prepared by our grandmothers. It is one of my favourite dosa. My mother-in-law is an expert in tender coconut dosa. To prepare tender coconut dosa we need fewer ingredients.
For the making of tender coconut dosa soaked dosa rice. Initially, we need to blend the tender coconut flesh, later add the soaked rice. As flesh needs to become smooth before adding the rice or else the pieces will remain. No need to add any other ingredients for the preparation of the batter. Mix the salt for the taste to the dosa batter. In a hot iron tawa pour some batter and spread it. Apply ghee or oil on the top for better taste.
The coconut flesh gives a good aroma while having the dosa. This is the quick and instant recipe. We need not ferment the dosa batter. If batter made thick we can spread like other dosa. If dosa batter is watery, we can pour the dosa similar to neer dosa.
While serving the dosa, you can have chutney or sambar. But I prefer jaggery syrup for this tender coconut dosa. Jaggery syrup takes this dosa to another level for the taste buds. if you apply ghee on top, you can have it as it is.

Ridge gourd soup is very healthy and tasty. Ridge gourd soup is one of the best soups for weight loss. This vegetable is not harmful for anyone. Ridge gourd soup has a creamy texture. This soup is protein and fiber rich. It is one of the very low calorie vegetables.
When you are using the ridge gourd must be a tender one. You must peel out the harder skin, chop into small pieces. Small pieces help to cook easily. From the harder skin of ridge gourd you can have several dishes too. I only uploaded the video of dry chutney powder from it, I will link to that video too. Ridge gourd is a very healthy vegetable. It contains lots of water in it.
The onion and tomato added because of flavour. Garlic and ginger also give a good aroma to the soup. You can skip the addition of onions and tomatoes. It is completely your choice. Black pepper and salt are mildly seasoned to the soup. This soup doesn't require any additional spicy, flavour and cream.
If you feel spicier you can green chilly. For this soup you can add curd or yogurt for a more creamy texture than ridge gourd soup. Add you can mix any veggies to this soup.
After preparing a soup, serve in a bowl when it is super hot. The hot soup tastes good. It is well-suited with papad, flatbread. You can have this soup either for breakfast or dinner. Or you can make this soup for starters with a main course.
