How to Smoke Salmon on the Char-Griller 980 Gravity Series. Used Avocado Oil as a binder on the Salmon and rubbed it down with some SPG and Honey Hickory Rubs. Had the Char-Griller 980 set to 200 degrees, and placed in the Salmon inside and let it smoke for 1 hour. After 1 hour of smoking I put the Char-Griller Temperature Probe into 1 of the Salmon pieces. Once the internal temperature reached 130 degrees, I glazed it with a mixture of a little more than 1/4 cup of honey and a shot glass of Bacardi Limon to give it a little more lemon flavor.
