Local Chicken with Mustard Oil ? ( Delicious ) - Pabs Kitchen
This family's favorite and staple dish is a typical recipe from my family since I remember. Chickens were homegrown and cooked in medicinal spices that we believe that cures common cold and gives strength to the body after a long day of work. It is to share with a big family! Homegrown free range chickens are so flavorful, and after you add the spices, you could add soup as much as you want and it used to be enough for everyone. I still remember those happy satisfying faces after enjoying it. This is not just a recipe but for me it has so much love, care, share and full of nostalgic memories that makes me happy and I still love to cook the way it was, so delicious even without use of onions and tomatoes.

Cooking time 80 minutes Serves 6
Ingredients 1.2 Kg Local Chicken (Free range) 4 tbsp Mustard Oil 1 tsp Cumin Seeds ½ tsp Turmeric powder 1 tsp Red Chili powder 1.5 tsp sea Salt / use to your taste 2 tbsp Basmati Rice / use available one 4 tbsp chopped spring Coriander Water as per necessary
To Masala paste 1.5 tbsp Coriander seeds 1 tbsp Cumin seeds 1 Star Anis 1 inch Cinnamon stick 1 Cinnamon leaf 10 Cloves 10 Green Cardamom 5 large cloves of Garlic 1 inch large Ginger 8 small sized but spicy fresh Chilies / use to your taste
Red Split lentils are one of the essential ingredients in Nepalese gastronomy, sometimes we just boil with a pinch of salt or cook like I do in this recipe and it becomes so delicious. We eat as a side on our Thali which brings rice, curries, pickles and more. This dish is so easy to make and so delicious. I hope you give it a try.

To boil
200 gr cleaned & washed Red Split Lentils
1 Bay Leaf
1 Star Anis
1/2 inch peeled Ginger
1/4 tsp Turmeric powder
1/2 tsp Salt or to your taste
To season
1 & 1/2 tbsp Ghee (clarified Butter) or Oil
1/4 tsp Cumin seeds
A pinch or 2 Turmeric powder
1 & 1/2 medium size Tomatoes
Salt to your taste
2 dried whole Chilies

Potatoes are very common in everyone’s kitchen, if you make it in is way you will love them even more. I dip the potato cubes into the batter of Nepalese spices with sesame seeds and chickpea flour, then I fry them twice. It becomes so crispy, spicy that you don’t like to stop eating. Try them out with your family and enjoy.

2 Kg Red Potatoes / Loura Potatoes
1 ltr Peanut Oil
1 tsp salt
Wood skewers enough to skew the Potatoes cubes (mine was about 30)
To the Batter
1 and ½ teacup Chickpeas flour
1 tsp Garam masala
1 tsp Red chili powder
½ tsp of Turmeric powder
1 tsp Black pepper
1 tsp Baking soda
½ tbsp Salt

Very typical snack dish from Nepal which is normally eaten with drinks. In this video I use the Sukuti that I made for myself and went so well. Lovely beef marinated with the beer, garlic and other aromatic spices to bring a delicious flavor to your taste. The sauce is the main part of this snack (Petisco) as well as sliced beef. It is amazingly flavorful and I strongly recommend you to try it?
Serves 2
Cooking time 10 to 15 minutes after prepared the all ingredients and marinated beef
Ingredients
To marinate the Beef 30 minutes to 2 hours
400g of sliced strips beef
150ml normal beer (or white wine)
1 tbsp Dijon mustard
2 cloves of garlic minced
1 bay leaf
1 tbsp Olive oil
Piri piri at your taste (optional)
1/3 tsp paparica (optional)
Thyme optional
Salt at your taste
To cook
2 tbsp of olive oil or other type of oil
3 tbsp of butter with or without salt
3 cloves of crushed garlic
150ml of water to make more sauce (optional)
50g of pickles chopped to serve
Olives without seeds as you like for decoration
How to cook
Marinate the beef with all those ingredients above, put in the fridge between 30 minutes to 2 hours.
Heat the cooking pan in medium heat and add olive oil, 2 tbsp of butter and crashed garlic and let garlic to be golden in color, do not burn it, add the marinated meat and keep the sauce a side.
Cook meat to your liking (rare, medium or well done), and take the meat out from the pan. Put it in the plate and reserve.
Add the sauce into the pan and cook until the alcohol evaporates, the minced garlic soften and the sauce gets thicker.
Add the meat and combine it well with the sauce and if the sauce is dried or if you want more sauce add 150ml of water into it. Add minced pickles and cook it further for 1 minute. Add 1 tbsp of butter and mix well.
Your Pica-Pau is done!
Plate and decorate with the little bit of pickles and olives. Enjoy!

Pabs Kitchen is cooking spicy and delicious today! It is minced meat and Tofu with a blend of Chinese and Nepalese spices. This is type of mix dish recipe for example you can call Mapo Tofu or in Nepal is Curry. Which is I use typical Chinese broad bean chili paste and Sichuan pepper which is delicacy from Sichuan province in China. Nepalese spices like Turmeric, Cumin powder, Garam Masala etc. And to make the dish tastier I fried the minced meat then cook in spices. 350 grams Pork minced meat or Beef
250 grams Tofu, chopped into 1 inch cubes
1 tbsp Broad Bean chili paste (buy from Chinese store)
2 tbsp Chili oil
8 cloves of minced Garlic
1 Red Onion
1-inch minced Ginger
2 large minced fresh Chilies
3 stems of finely spring Onion
1 tsp Cumin powder
½ tsp Turmeric powder
½ Black pepper
½ tsp Timur / Sichuan pepper
6 to 7 tbsp vegetable Oil or preferable one
1 tbsp Corn Starch, mix with 4 tbsp water
2 cups hot water for the sauce
Salt to your taste
½ tsp Garam Masala optional
1 tsp Sesame Oil optional
If you like, season with roasted sesame seeds, chopped spring onion and a few drops of chili Oil as you prefer.
