EASY RICE COOKER CAKE RECIPES: Cardamon Almond Cake Recipe | Indian | Vegan | Egg-less
INGREDIENTS:
• 1 cup (250ml) COCONUT MILK (almond milk)
• 1 tbsp (13g) WHITE DISTILLED VINEGAR (lemon juice)
• 1 cup (140g) UNBLEACHED ALL PURPOSE FLOUR
• 1 tsp (4g) BAKING POWDER
• 1/2 tsp (2.5g) BAKING SODA (bicarbonate soda)
• 1/4 tsp FINE SALT
• 2 tbsp (12g) CORN STARCH (corn flour)
• 1 1/2 tsp (3g) GROUND CARDAMOM
• 1/4 cup (30g) ALMOND FLOUR (ground almond)
• 1/2 cup (100g) PURE CANE SUGAR (brown sugar)
• 1/4 cup (60ml) COCONUT OIL (vege oil)
• 1/2 tsp (2g) VANILLA EXTRACT (almond extract)
• 1/2 cup (85g) RAISINS
• 2 tbsp (15g) CHOPPED PISTACHIO (or almond sliver/slices)
HOW TO:
1. In a small bowl, mix milk and vinegar and set a side
2. In a another bowl, sift flour, baking powder, baking soda, salt, corn starch, cardamom and almond flour and whisk to combined
3. In a large mixing bowl, whisk sugar, oil and vanilla extract for 1 minute. NOTE: if using larger sugar granules, add a bit of milk into the mixture and whisk until the sugar dissolved
4. Add half of the flour mixture into the sugar and half of the milk then whisk for 15 seconds. Add the rest of the flour and milk and whisk until incorporate; about 30 seconds
5. Add the raisins into the batter or sprinkling the raisins evenly on top after pouring the batter into the pot/pan. NOTE: I added the raisins into the batter and it sunk to the bottom. So, I think sprinkling them on top and pushing it down slightly might prevent all of them from sinking to the bottom
6. Lined pot/pan with parchment paper and pour in batter
7. Top with chopped pistachio or almond slivers or almond slices
8. Bake for 3 bake cycles (1 hr 30 min). Rice cookers varies so check after 2 bake cycles (1 hr) and bake longer if needed
9. Cool for 20-30 before cutting. You can also dust powdered sugar (icing sugar) on top if you like it sweeter
